Lammeskav med hummus ble en skikkelig eksplosjon av smaker og farger på middagsbordet. Her har jeg stekt lammekjøttet med krydder fra Midtøsten og servert det på en seng av hummus. Så har jeg toppet det med bakte hokkaidogresskar,  syltet rødløk og litt dill.

Ikke la deg skremme av at det er en veldig lang ingrediensliste. Syltet rødløk kan du lage på 5 minutter og spiser du det ikke opp kan du oppevare det i kjøleskapet i minst en uke. Tilberedelsen av gresskaret tar litt tid, men det er ovnstid og ikke aktiv tid fra din side. Hummus er også forbausende kjapt å lage  dersom du har en matmølle eller stavmixer.

Dersom du ikke får tak i et lite hokkaidogresskar, kan du fint bruke andre gresskar, eller gulrøtter for den saks skyld. Det jeg liker så godt med hokkaidogresskarene, er at også skallet kan spises når det er bakt. Det er med andre ord litt lettere å ha med å gjøre, og smaken er mild og fin.

  • 1 pakke lammeskav (300 gr)
  • olje til steking
  • 1 ts spisskummen
  • 1 ts malt koriander
  • 2 fedd hvitløk
  • 1/2 ts salt
  • nykvernet pepper
  • ---
  • 1 pakke kikerter (175 gr. nettovekt)
  • 2 ss tahini
  • 1 fedd hvitløk
  • saften av 1/2 sitron
  • 1/2 ts salt
  • 1 ss olivenolje
  • vann
  • ---
  • 1 hokkaido gresskar (400-500 gr)
  • olivenolje
  • 1 fedd hvitøk
  • 2-3 kvister timian
  • salt og pepper
  • ---
  • 1 dl eddik 7%
  • 2 dl sukker
  • 3 dl vann
  • 10 pepperkorn
  • 1 laurbærblad
  • 2-3 rødløk

Fremgangsmåte

  • Lag dobbel porsjon hummus
  • Bak gresskar
  • Lag syltet rødløk
  • Når alt det andre er klart: Varm litt olje i en stekepanne og fres spisskummen, koriander og nykvernet pepper i 30 sekunder.
  • Ha kjøttet og hvitløken oppi pannen og stek til det er godt og sprøtt. Dryss på litt salt.

Server kjøttet sammen med hummus, gresskar, rødløk og pynt gjerne med litt friske urter.
