Stekt kyllingbryst med druer bakt i ovnen ble rett og slett en skikkelig smakfull og litt overraskende deilig middag.  Druer er jo absolutt ikke noe nytt på kjøkkenet mitt, men de spises stort sett au naturel eller kankje blandet inn i en salat. Å varme dem opp har i grunnen aldri falt meg inn, men det blir definitivt ikke siste gangen jeg gjør det. Når de ble varmet opp kom  sødmen enda bedre frem. Det høres kanskje voldsomt ut, men jeg garanterer – det ble ikke for søtt.

Ideen fikk jeg fra en amerikansk podcast som heter Weeknight kitchen with Melissa Clark. Hun er matskribent og kokebokforfatter med mer enn 40 kokebøker på samvittigheten. Hver uke tar hun for seg en middagsrett som kan passe på en hverdag. Podcast’en anbefales herved på det varmeste.

Hun steker riktignok en hel kylling, men på en hverdag synes jeg det blir for mye. Da er det bedre med stykker av kylling, som for eksempel kyllingbryst. Jeg har brukt helt vanlige kyllingfileter, og det smakte sannelig veldig godt det også.

Server kyllingbrystene med druer, grønn salat og godt brød ved siden av. Brødet kan også erstattes av litt stekte poteter. Prøver du deg på dette kan jeg nesten garantere at det ikke blir siste gang du lager kyllingbryst med druer, så bra var den kombinasjonen.

Ingredienser

  • 600 gr kyllingbryst (4 stk)
  • 1 pakke røde druer (500 gr.)
  • olivenolje
  • salt
  • 2 ts fennikelfrø
  • 1 ts hel pepper
  • 2 ss sherryeddik

Fremgangsmåte

  • Sett ovnen på 200 grader varmluft.
  • Knus pepper og fennikelfrGø grovt i en morter.
  • Gni kyllingbrystene inn med knust pepper og fennikel og dryss på salt.
  • Bak druene i ovnen i 20 minutter.
  • Stek samtidig kyllingbrystene i en stekepanne med litt olivenolje.
  • Når kyllingene nesten er ferdige, tilsett litt vann, sherryeddik og evt. saft som har rent ut av druene.
  • La det koke et par minutter.

Server kyllingbryst med druene. En frisk grønn salat ved siden av passer bra, og evt. litt godt brød eller noen stekte poteter.
