Hummus er en av de tingene som har blitt skikkelig populære i de siste årene. Det er kanskje ikke så rart, for hummus kan jo brukes til så mangt og så smaker det skikkelig godt. Det kan brukes som dipp sammen med grønnsaker og pitabrød, eller det kan smøres på brødskiva som pålegg, eller være en viktig del av middagen. Da er den gjerne toppet med hakkede grønnsaker eller stekt kjøtt. Jeg bruker den mest som dipp sammen med oppskårede grønnsaker, og synes det er en super måte å få spist mer grønnsaker på.

Min oppskrift er en enkel klassisk hummus smakt til med hvitløk og sitron. Jeg vet det er en stor debatt der ute på internettet om hvorvidt man skal ta av skinnet på kikertene. Angivelig blir hummusen mer silkemyk dersom kan tar seg bryet med å ta av skinnet. Den tålmodigheten har ikke jeg. Dessuten synes jeg det blir godt uansett. Men har du mye tid og tålmodighet kan du jo alltids ta av skinnet.

Når jeg lager hummusen bruker jeg å ha litt vann i til slutt for å få en passelig konsistens. Det går sikkert fint an å bruke laken kikertene ligger i, men jeg synes den ser så guffen ut at jeg heller den av og skyller kikertene. Jeg vet at dette kikert-vannet kan brukes til å lage vegansk marengs, så det er sikkert fint å bruke, men for meg ser den altså så guffen ut at det ikke frister overhodet.

Ingredienser

  • 1 pakke kikerter (175 gr. nettovekt)
  • 2 ss tahini
  • 1 fedd hvitløk
  • saften av 1/2 sitron
  • 1/2 ts salt
  • 1 ss olivenolje
  • vann
  • paprikapulver
  • spisskummin
  • extra virgin olivenolje

Fremgangsmåte

  • Hell vannet av kikertene og ha dem i en foodprosessor.
  • Grovhakk hvitløken og ha den oppi sammen med kikertene.
  • Ha resten av ingrediensene unntatt vannet oppi og kjør til en jevn masse.
  • Spe med litt vann til det blir en kremet konsistens.
  • Ha over i en skål. Dryss med paprika og spisskummin og ringle over litt god olivenolje.
