Nå bugner det av deilige grønnsaker over alt. Jeg går nesten totalt bananas hver gang jeg er i butikken, og kommer hjem med en hel haug med frukt og grønt, som vi da må spise oss igjennom før det blir dårlig. Nå lå det både auberginer, squash og masse paprika i grønnsaksskuffen. Det ble til en deilig lun middelhavssalat til lunsj.  Etter lunsjen dro jeg i butikken igjen og kom hjem med enda mere. Godt det nesten ikke er grenser for hvor mye grønnsaker man kan spise.

Men denne salaten, altså, den ble skikkelig god. Her er det auberginer som er blitt silkemyke av varmen, paprika som er innsmigrende søt etter sin tur i pannen og den milde smaken av squash som fyller ut og kompletterer salaten. Litt eddik og hvitløk gir snert og ekstra dybde. Denne salaten kan godt spises som enn lett lunsj, ellers passer den ypperlig til all slags grillmat.

Jeg stekte grønnsakene hver for seg i en stekepanne. Planen var å grille dem, men fordi været var litt utrygt, ble det inne i stedet. Grillede grønnsaker ville nok gitt enda en dimensjon til denne lune salaten, men den var absolutt veldig god slik den ble også. Denne salaten kan helt sikkert stå en dag eller to i kjøleskapet (ikke det at det ble noe igjen), men ta den ut i god tid før du skal spise den så den i hvert fall får romtemperatur igjen.

Ingredienser

  • 2 middels auberginer
  • 1 stor squash
  • 2 paprikaer (røde eller gule)
  • salt og pepper
  • 2 ss rødvinseddik
  • 1 fedd hvitløk
  • 1 ss hakket frisk oregano
  • Olivenolje til steking

Fremgangsmåte

  • Skjær auberginen i 1 cm tykke skiver, på langs  dryss med litt salt og legg i et dørslag slik at auberginskivene kan dryppe av seg.
  • Finhakk hvitløken og bland den med rødvinseddiken og sett til side.
  • Skjær squashen i 1 cm tykke skiver på skrå og paprikaen i 2 cm tykke strimler.
  • Varm litt olivenolje i en stekepanne og stek paprikastrimlene til de har blitt litt myke.
  • Legg over i en form og dekk over med plastfolie. Da vil varmen gjøre at paprikaen mykner mer og slipper litt væske.
  • Krydre squashen med litt salt og pepper og stek  på begge sider til den blir myk og får litt farge. Tilsett mer olivenolje i pannen om nødvendig. Legg over i det ildfaste fatet som fortsatt skal være dekket til.
  • Skyll saltet av aubergineskivene og klapp dem tørre. Krydre med litt pepper og stek i litt mer olje til den har blitt myk. Legg over i formen.
  • La grønnsakene stå i minst 15 minutter.
  • Legg grønnsakene over på et fat og bland kraften som har blitt i bunnen av formen med rødvinseddiken.
  • Hell dressingen over grønnsakene og dryss over oreganoen.

Server med godt brød som en selvstendig rett, eller ved siden av grillmat.

Tips

Du kan også godt lage denne salaten på grillen. Da pensler du grønnsakene med olje før de legges på grillen i stedet for i stekepannen. Har du ikke frisk oregano, kan du gjerne bruke andre urter du liker.
