Det er sommer og squashtid. Noen har dem i hagen og får uhorvelige mengder, mens resten av oss må pent kjøpe dem i butikken. Squash har jo en veldig mild og nøytral smak så de er avhengige av en god del hjelp for å bli spennende synes jeg.  I dag bestemte jeg meg for å lage squash fylt med kylling, tomat og urter. Rikelig med friske urter og tomater sammen med kyllingkjøttdeigen ga nok smak til at retten ble spennende nok.  Resultatet ble rett og slett en nydelig sommerlig og lett middagsrett.

Selv om jeg ikke har squash i hagen, har jeg i hvert fall nok urter. Det er en fornøyelse å gå ut der og hente inn til hvert måltid. Denne gangen hentet jeg bladpersille, oregano og salvie med mengder i den rekkefølgen. Det er en blanding jeg synes passet godt til denne retten, men her er det jo egentlig bare fantasien og tilgang (selvfølgelig) som setter grenser.

Ingredienser

  • 4 squash
  • 400 gr kyllingkjøttdeig
  • 1 løk
  • 2 fedd hvitløk
  • 1 boks tomater
  • 2 ss hakkede urter (jeg brukte en blanding av oregano, salvie og bladpersille)
  • salt og pepper
  • revet Jarlsberg
  • olje til steking

Fremgangsmåte

  • forvarm ovnen til 200 grader varmluft.
  • Del squashen i to på langs og skrap ut innmaten, men la det være igjen ca. 1/2 cm.
  • Hakk squashkjøttet, løk og hvitløk fint.
  • Varm litt olje i en stekepanne og fres grønnsakene til løken er myk og squashen har sluppet en god del vann, og dette er fordampet.
  • Tilsett kyllingkjøttdeigen og stek til den er gjennomstekt.
  • Ha oppi tomaten og urtene og smak til med salt og pepper. La blandingen surre på middels varme i 10 minutter.
  • Legg de uthulte squashene i en ildfast form og fyll med kjøtt- og grønnsaksblandingen og dryss osten over.
  • Stek i ovnen i ca. 20 minutter.

Server med en salat ved siden av. Vel bekomme.
