I dag har jeg laget en skikkelig januar salat med sardiner,  poteter og et tydelig middelhavspreg. Etter min mening tikker denne salaten alle boksene. Den er er enkel å lage. Den består av ting du enten allerede har hjemme, eller som du får i den vanlige butikken, den er billig og ikke minst så smaker den skikkelig digg.

Denne salaten kan rett og slett kalles spiskammerssalat. Poteter, rødløk og brokkoli er riktignok ferskvarer, men i denne salaten er det sardiner, bakt paprika og oliven som virkelig bidrar med de gode smakene og gir salaten karakter.  Og disse tre siste tingene er altså ingredienser som godt kan komme ut av en boks i spiskammerset, eller kjøkkenskapet. Det å ha et lite lager med bokser med forskjellig innhold er gull verdt. Innholdet i slike bokser kan være nøkkelen til suksess de gangene du ikke har tid, lyst eller anledning til å lage noe særlig.

Jeg har brukt sardiner i denne salaten, men det er kanskje ikke den mest populære fisken. Det er i grunnen litt synd, for det er en fisk som smaker godt og er veldig sunn med mye omega-3. Har du ikke sardiner, kan du godt bytte ut med annen fisk på boks, eller kanskje du har noen fiskerester fra gårsdagens middag. Alt går fint, me  da er det jo ikke lenger en salat med sardiner og poteter. Det gjør jo ingen ting, for hele poenget med denne retten er jo å bruke det du har.

Ingredienser

  • 200 gr sardiner i olivenolje (2 bokser)
  • 8 poteter
  • 1 rødløk
  • 1 bukett brokkoli
  • 2 røde paprikaer
  • sorte oliven
  • --
  • 2 ss sherryeddik
  • 1 fedd hvitløk
  • 4 ss olivenolje
  • salt og pepper

Fremgangsmåte

  • Kok potetene som vanlig.
  • Lag dressingen ved å hakke hvitløken fint og legg den i eddiken i 10 minutter. Pisk så inn oljen og smak til med salt og pepper.
  • Del brokkolien i små buketter og kok i lettsaltet vann i 3 minutter. De skal fortsatt ha litt tyggemotstand og være knallgrønne.
  • Bak paprikaene i ovnen, eller bruk ferdige på glass. Skær paprikaen i strimler
  • Skjær rødløken i kvarte skiver.
  • Skjær potetene i skiver og legg sammen med rødløken, brokkolien og paprikaen i en salatbolle.
  • Hell over dressingen og bland godt.
  • Legg sardinene på toppen sammen med olivenene.

Server gjerne med godt brød ved siden av. Vel bekomme.
