På varme dager er det godt med salat til middag, og da er denne salaten et skikkelig godt alternativ. For når jeg lager salat til middag liker jeg at den inneholder ting som gjør at jeg holder meg mett lenge. Noen salatblader og litt agurk duger ikke akkurat. Men min sommersalat med makrell passer ypperlig i så måte. Salaten er nemlig lett å lage, metter godt og smaker deilig. Makrell, nypoteter, smilende egg og knasende, sprø bønner sammen med smaksrike tomater det er godt, det.

Jeg har brukt peppermakrell, men har du rester av stekt makrell, er det like godt. Du kan også bruke kaldrøkt makrell. Når det gjelder grønnsakene kan du selvsagt bytte ut de jeg har brukt med andre grønnsaker om du har lyst, men jeg synes denne kombinasjonen er veldig god.

Har du lyst på andre gode, mettende salater kan du sjekke ut Cæsarsalat eller kyllingsalat med pære og ost. Begge disse salatene er knallgode og egner seg godt som et selvstendig måltid.

Ingredienser

  • 2 fileter peppermakrell
  • 12 små nypoteter
  • 150 gr aspargesbønner
  • 150 gr voksbønner
  • 1 pakke cherrytomater
  • 1 romanosalat
  • 4 egg
  • 1 ss hvitvinseddik
  • 1 ts dijonsennep
  • 1 fedd knust hvitløk
  • 3 ss olivenolje
  • salt og pepper

Fremgangsmåte

  1. Kok potetene møre.
  2. Kok eggene i 7 minutter, eller så lenge du liker.
  3. Kok aspargesbønner og voksbønner i 3 minutter.
  4. Rens makellfiletene og del i mindre biter.
  5. Vask salaten og snitt den i strimler
  6. Skjær tomatene i halve , potetene i biter og bønnene i 3 cm lange biter.
  7. Legg den knuste hvitløken i eddiken og la den stå i 10 min. Pisk inn sennep og til slutt olivenoljen.
  8. Anrett på fire tallerkener, eller på ett stort fat.
  9. Hell over dressingen

Server med godt brød til. Vel bekomme.
