I dag har vi feiret Tuppens 11 års brusdag, og hun ville gjerne at vi skulle ha salat og rundstykker før kaken. Hun ønsket seg gresk salat, men jeg hadde mer lyst til å lage en annen. Så da ble det til at jeg lagde to forskjellige salater.

Det jeg hadde lyst på var en kyllingsalat med pære, bacon, linser og blåmuggost. Dette er en skikkelig god og spennende salat. Med både kylling og linser, nøtter og ost blir den deilig mettende, og pærene og salaten gjør den frisk.

Ingredienser

  • 4 kyllingfileter (ca 500 g)
  • 1 pk bacon
  • Smør til steking
  • Havsalt og pepper til kyllingen
  • 2 pærer
  • 80g ruccolasalat og småsalat
  • 1 bx grønne linser (evt. 1 dl tørre linser som kokes i lettsaltet vann)
  • 1 blåmuggost –ca 140g. for eksempel Saga
  • 50 g valnøttkjerner eller pinjekjerner
  • 2 ss olivenolje
  • 2 ss balsamico

Fremgangsmåte

  • Pærene bakes hele i ovnen ca 12 min, 200 grader.
  • Sprøstek bacon og stek kyllingbrystene.
  • Skjær pærene i båter og kyllingen i stykker.
  • Hakk nøttene litt. Bruker du pinjekjerner; rist disse litt i en panne.
  • Bland salat, kylling, linser, bacon, nøtter og pærer og legg på et serveringsfat.
  • Pisk sammen olivenolje, balsamico og honning og hell over salaten rett før servering.

Server gjerne med godt brød eller rundstykker ved siden av. Vel bekomme.
