Her i familien er gresk salat en hit. Aller best er den selvsagt om sommeren når tomatene er på sitt aller mest smaksrike. De søte tomatene og den salte osten er en superkombinasjon. Det er derfor særdeles viktig å ha gode tomater, men kommer du over det, kan denne salaten anbefales på det varmeste (også når det ikke er høysommer). Uansett gir den meg sommer- og feriefølelse.

Derfor var det et lett valg å lage gresk salat i dag, på årets første skikkelige varme dag. At den kunne fortæres utendørs kun iført t-skjorte og shorts satte ikke akkurat noen brems på opplevelsen. Snakk og deilig start på påskeferien i år. I salaten på bildet har jeg glemt å ha oliven i salaten. Det gjør etter min mening salaten ennå bedre med enn uten, men av og til kan man jo glemme….

Ingredienser

  • 4 tomater
  • ½ agurk
  • 1 grønn paprika
  • ½ rødløk
  • 100 gr. fetaost skåret i terninger
  • 20 sorte oliven
  • 3 ss olivenolje
  • 1 ss rødvinseddik
  • salt og pepper
  • 1 fedd hvitløk, finhakket

Fremgangsmåte

  • Skjær tomater i båter, paprika og agurk i biter og rødløken i tynne skiver.
  • Legg alle grønnsakene på et fat.
  • Bland sammen olje, eddik, salt, pepper og hvitløk til en vinegrette og hell over. Bland salaten slik at alle grønnsakene blir dekket av dressing.
  • Avslutt med å legge fetaost og oliven på toppen.

Kan serveres som egen rett med brød til, ellers denne salaten ypperlig til stekt og grillet kjøtt eller fisk.
