Det er mange grunner til å like en god Cæsarsalat. Den har store stykker med saftig kylling og den har frisk salat. Det er også de sprø krutongene. Men for meg er det først og fremst dressingen som gjør denne klassiske salaten til noe helt spesielt. Dressingen er fløyelsmyk som majones, perfekt balansert med syre og salt og tilslutt har den et tonn med umami.

Cæsarsalat er egentlig veldig lett å lage – den er riktignok ikke laget på 1-2-3, men særlig komplisert er det ikke. Salaten inneholder bare noen få ingrediener, og dermed er det desto viktigere at de er gode. Jada, jeg vet at ingredienslisten er lang, men det meste av det er til dressingen.

Velg gjerne kyllingbryst fra Stange, Holte gård, Louise eller hva de nå heter. De er som regel større enn de som selges i gule bakker og har dermd langt større sannsynlighet for å bli saftige etter at de er stekt. Til Cæsarsalat skal det være romanosalat. Den ser ut som en forvokst hjertesalat, men har en litt sterkere smak og kraftigere blader. Det siste er viktig for å kunne holde stand mot dressingen.

Og så var det dressingen da. Det skal være ansjos i dressingen. Da er det viktig å bruke noen gode kvalitetsansjos fra et land i middelhavsområdet, og ikke de som ligger i en hermetikkboks ved siden av eggene i butikken. De siste er krydret med ett eller annet som ikke passer i denne dressingen. Ellers er det viktig å smake til dressingen, for selv om mengdene er nøyaktig oppgitt i oppskriften er det mange variabler det er umulig å ta høyde for. Eggene kan være store eller små, sitronen kan være mer eller mindre syrlig, kanskje du liker en kraftigere ansjossmak, eller du vil ha mer parmesan. Smak underveis, og juster med de forskjellige elementene til du får en dressing du virkelig liker.

Ingredienser

  • 500 gr kyllingbryst
  • salt og pepper
  • 1 stort romaosalathode
  • 1/2 formloff
  • olivenolje til steking
  • 1 ts salt
  • 1 ts hvitløksalt
  • 2 eggeplommer
  • 1 ts dijonsennep
  • 2 finhakkede ansjosfileter
  • 1 fedd hvitløk, finhakket
  • 1/s sitron, saften
  • 1 1/2 dl rapsolje
  • 1 neve fint revet parmesan
  • pepper og evt. salt
  • Ekstra parmesan til å rive over til slutt

Fremgangsmåte

  • Begynn med å steke kyllingbrystene. Krydre med salt og pepper og stek på middels varme på begge sider til den er gyllen utenpå og gjennomstekt, men ikke tørr.
  • Skjær skorpen av loffen og lag terninger på ca. 2 x 2 cm.
  • Varm litt olivenolje i en stekepanne og stek loffterningene på middels varme til de har blitt sprø. Dryss over salt og hvitløksalt og bland godt.
  • Vask salaten og riv den i litt grove biter.
  • Lag dressingen slik:
    • pisk eggeplommene seige sammen med sennepen. Tilsett sitronsaften og pisk det sammen.
    • Tilsett oljen dråpevis mens du pisker hele tiden. Når ca. halvparten av oljen er tilsatt kan du helle i litt mer om gangen.
    • Smak til dressingen med ansjos, hvitløk og revet parmesan.
  • Eller du kan ha alt beholder og kjøre det glatt med en stavmixer.
  • Anrett salaten på et serveringsfat og legg brødkrutonger og kyllingbryst skåret i skiver oppå. Drypp over halvparten av dressingen. Riv litt ekstra parmesan over til slutt.

Server med resten av loffen og ekstra dressing ved siden av. Et glass hvitvin eller rosé ved siden av er heller ikke feil.
