Poké er gatematen fra Hawaii som har tatt verden med storm. Det er litt som en blanding av sashimi og ceviche, men samtidig noe helt eget. Poké er rett og slett rå fisk som er marinert i soyasaus, sesamolje, eddik og tilsatt hvitløk, vårløk og ingefær. I tillegg til den marinerte fisken, serveres ris og grønnsaker i samme bolle. Grønnsakene kan varieres ut fra hva man har og hva man liker. Poké bowl med laks og grønnsaker er veldig godt og lett å lage.

Nå har jeg dessverre aldri vært på Hawaii, men etter sigene skal det vanligste være å lage poké med tunfisk. Det er jo ikke akkurat en hverdagsfisk her hjemme, men jeg lover at poké bowl med laks også veldig godt. Jeg er temmelig usikker på om det er vanlig med en hel masse forskjellig toppinger i den opprinnelige varianten. Men med et utvalg av forskjellige ting, er det lettere for alle å finne noe de liker. Dessuten gjør jo alle grønnsakene at det blir et komplett måltid, og så det ser i hvert fall veldig fargerikt og flott ut.

Ingredienser

  • 3 dl sushiris
  • 500 gr laksefilet
  • 3 ss soyasaus
  • 1 ss riseddik
  • 1 ts sesamfrøolje
  • 1 fedd hvitløk, finhakket
  • 1 ss revet ingefær
  • 2+1 ss sesamfrø
  • 1/2 agurk
  • 4 reddiker
  • 1 mango
  • 1 avokado
  • 2 vårløk
  • 100 gr edamame uten belg

Fremgangsmåte

  • Kok risen etter anvisning på pakken.
  • Rist sesamfrøene i en tørr stekepanne til de blir lysebrune og det begynner å dufte.
  • Bland sammen soyasaus, riseddik, sesamfrøolje, hvitløk, ingefær og 1 ss ristede sesamfrø.
  • Skjær laksen i 1,5 cm store terninger og legg i marinaden. Sett i kjøleskapet og la det marinere mens resten lages til.
  • Skjær agurken i skiver, vårløken i tynne ringer, avokadoen i biter, reddikene i skiver og mangoen i skiver.
  • Fordel risen i fire boller og legg fisk og grønnsaker oppå, eller legg alle grønnsakene i skåler og sett alt på bordet slik at alle kan lage sin egen poké bolle med det de liker.
