Ofte er de ananasene som er å få kjøpt i butikkene her hjemme ganske blasse i smaken. Derfor synes jeg ofte de blir bedre om de får litt ekstra smak. Steking er også med på å få frem smaken bedre. Stekt ananas med chili og mynte leder helt klart tankene til asia, og dette vil være en perfekt avslutning på et asiatisk måltid.

Jeg husker første gang jeg smakte kortreist og helt moden ananas. Det var en smaksopplevelse av de store. Ananasen var like søt som den vi får på boks her hjemme, men hadde en helt annen friskhet og totalt saftig. Smaken rett og slett eksploderte i munnen. Det var så godt at det nesten var umulig å stanse når vi først hadde begynt. Dette skjedde på stranden i Vietnam og hele seansen var fullstendig fasinerende. Barn solgte ananas på stranden. Når man hadde valgt hvilken man ville ha, renset de ananasen med sikre hender og en kirurgs presisjon. Ikke et gram mer enn nødvendig ble skåret bort og i tillegg fikk ananasen et vakkert rillemønster. Hele greia tok noen få minutter og etter det var ananasen klar til å spises.

Ingredienser

  • 1 hel ananas
  • 4 ss sukker
  • 1/2 dl vann
  • 2 ss smør
  • 1/2 rød chili
  • 10 mynteblader

Fremgangsmåte

  • Skjær skallet av ananasen og stikk gjerne ut den harde kjernen i midten. En eplekjerneutstikker fungerer supert.
  • Hell sukker og vann i en stekepanne og la det småkoke til massen har fått en gyllen karamellfarge. Tilsett smøret og vent til det har smeltet helt ned i karamellen.
  • Stek ananasen 2-3 minutter på hver side i karamellblandingen.
  • Dryss over finhakket chili og mynte.

Server lun, gjerne med vaniljeis eller stivpisket creme fraiche.
