Etter jul bestemte jeg meg for å lage mer fisk og grønnsaker, noe jeg i stor grad har greid også. På grønnsaksfronten har det av naturlige årsaker vært mest rotgrønnsaker. Med lengre dager merker jeg at jeg får mer og mer lyst på andre grønnsaker som for eksempel forskjellige salater. På salatfronten synes jeg ofte at less is more. Noen få råvarer som kler og kompletterer hverandre blir ofte bedre enn en hel haug forskjellige ting som nesten slår hverandre i hjel. Et par, tre ingredienser og en deilig vinaigrette er ofte alt som skal til.  I dag har jeg laget en salat med fennikel og reddik og litt, men ikke mye mer.

Denne salaten er veldig frisk og passer særlig godt til stekt fisk. Prøv den for eksempel ved siden av stekt piggvar eller smørflyndre

Salaten ser kanskje litt blek ut, men i denne salaten er det mye sprøtt som mer enn veier opp for den litt bleke fargen. Fennikelen er skikkelig sprø og det samme er jo reddiken. Dessuten er det litt nøtter for ekstra krønsj. Fennikelen blir ekstra sprø, fordi jeg har lagt den i kaldt vann etter at jeg kuttet den opp. Den trenger ikke ligge så lenge, 15-20 minutter er nok. Og så bør du regne med ca. 5 minutter til å renne av/tørke. Er fennikelen våt vil bare dressingen renne av, og det er jo litt kjedelig.

I tillegg til fennikel og reddik har jeg strimelt noen mynteblader. Den ble en skikkelig god kombinasjon synes jeg, men her er det jo bare å eksperimentere med alle slags urter. Persille og dill passer nok også veldig godt, og så tror jeg at estragon kan bli en veldig spennende smak sammen med fennikelen.

Ingredienser

  • 2 fennikel
  • 4 reddiker
  • saften fra 1/2 sitron
  • 3 ss olivenolje
  • salt og pepper
  • mynteblader
  • 1 håndfull pistasjnøtter

Fremgangsmåte

  • Skjær fennikel og reddik så tynt du kan. Bruk gjerne mandolin om du har. Ta vare på fennikeltoppene.
  • Legg fennikelskivene i kaldt vann i 15-20 minutter for at de skal bli ekstra sprø. Ta fennikelen opp og la den dryppe godt av seg.
  • Hakk nøttene i mindre biter.
  • Stimle myntebladene.
  • Bland sitronsaft og olivenolje til en vinaigrette og smak til med salt og pepper
  • Dander fennikel og reddikskiver på et fat og bland inn dressingen. Dryss over hakkede nøtter, strimlet mynte og fennikeltopper.

Server straks, vel bekomme.

Tips

Ikke la salaten stå lenge med dressing før servering. Da mister den sprøheten. Skal du lage salaten på forhånd, lønner det seg altså å vente til siste øyeblikk med å tilsette dressingen.
