Ett av mine nyttårsforsetter var å spise mer fisk. Det har jeg heldigvis klart – i hvert fall hittil i år. En spennende ting med fisk, er jo at det finnes så mange forskjellige typer. Det er ingen som helst grunn til å la seg begrense til torsk, sei og laks når middagen skal lages. Er du så heldig å ha en fiskehandler, eller en butikk med en skikkelig fiskedisk vil jeg slå et slag for alle de andre fiskeslagene. Prøv noe nytt, det er så mye som er godt. I dag lagde jeg stekt smørflyndre. Det var utrolig godt, og usedvanlig lettvint. Fisken kommer som regel ferdig filetert og skal ikke stekes mer enn 2-3 minutter i alt. Dette er med andre ord skikkelig fast food.

Til den stekte fisken serverte jeg brunet smør og en hvitløkstappe. Med et glass hvitvin ved siden av vil stekt smørflyndre  helt klart kunne passere som en raffinert selskapsrett.

Hjemme hos oss lager vi mye potetstappe. Det er både lettvint og veldig godt. Et viktig triks for å få en vellykket potetstappe er å ikke ha salt i kokevannet. Med salt i kokevannet blir nemlig potetstappen seig som tapetklister, og det vil man jo ikke. Tilsett heller saltet til slutt.

Ingredienser

  • 600 gr smørflyndre
  • 3 ss hvetemel
  • 1 ts salt
  • nykvernet pepper
  • olje til steking
  • finhakket persille
  • --
  • 200 gr smør
  • --
  • 800 gr poteter
  • 4 fedd hvitløk
  • 2 dl melk
  • 2 ss smør
  • salt

Fremgangsmåte

  • Skrell potetene og del dem i mindre biter. Skrell hvitløken også og kok alt i vann uten salt. Kok til alt er mørt.
  • Hell av vannet og damp potetene til de ikke lenger er fuktige på utsiden.
  • Mos potetene. Ønsker du en grovere stappe kan du bruke en moser, og ønsker du en helt glatt konsistens kan du gni potetene gjennom en sil. Bland deretter inn melk og smør. Bruk evt. mer melk om mosen blir tørr. Smak til med salt til slutt.
  • Finhakk litt persille
  • Mens potetene koker, smelt smøret og la det koke til det begynner å skumme. Rør med en tresleiv. Når det begynner å lukte litt nøtteaktig er smøret ferdig. Pass godt på for dette går fort. Hold smøret varmt til servering.
  • Bland mel, salt og pepper. Vend fiskefiletene i melblandingen og rist av overflødig mel.
  • Varm litt olje i en stekepanne og stek fisken på høy varme til den har blitt pent brun på begge sider. I alt tar dette bare 2-3 minutter.

Server smørflyndren med smøret og finhakket persille og hvitløkstappen ved siden av.  En salat til er også godt.
