Det er en liten gruppe nordmenn som spiser torsk på julaften. Men tar man med romjulen også, antar jeg at det ikke er helt uvanlig med juletorsk. Her får du oppskrift på juletorsk med klassisk tilbehør. Tilbehøret er det smørkokte gulrøtter og Sandefjordsmør. Dette er deilig lett mat som smaker ekstra godt etter noen dager med tung kjøttmat på tallerkenen.

Når du serverer kokt fisk som dette, er det viktig at alt tilbehøret er ferdig når fisken er klar, for den blir fort kald, og ingenting er så kjedelig som kald fisk. Skal du servere to ganger, bør du også trekke halvparten av fisken først og resten mens dere venter på andre servering.

Ingredienser

  • 1,5 kg torsk i skiver
  • salt
  • 3 dl kremfløte
  • 2 ts maizena, evt.
  • 200 gr smør
  • sitronsaft
  • salt og pepper
  • 6 store gulrøtter
  • 2 ss smør
  • 2 små potter persille
  • 1,5 kg poteter

Fremgangsmåte

  • Begynn med å rense fisken for blod og la den ligge i rennende vann i 30 minutter. Da blir den ekstra fin.
  • Kok poteter.
  • Rens gulrøttene og skjær dem i 1/2 cm tykke skiver på skrå.
  • Kok fløten (evt. med maizena for en mer stabil saus) inn til det halve, og pisk inn små smørterninger i fløten. Fortsett til alt smøret er pisket inn. Etter dette må sausen ikke koke, for da vil den skille seg.
  • Kok gulrøttene såvidt møre i lettsaltet vann. Hell av vannet og smelt smøret i gryten og vend gulrøttene i smøret.
  • Skrell potetene.
  • Smak Sandefjordsmøret til med sitron, salt og pepper og rør inn finhakket persille.
  • Kok opp lettsaltet vann (1 ss salt pr. liter vann).
  • La fisken trekke i 8-10 minutter, avhengig av tykkelsen på skivene.
  • Server fisken på varme tallerkener med resten av tilbehøret.
