Så er det makrelltid igjen, og hva roper vel mer sommer enn stekt makrell med rømmesaus? Her serverer jeg den på klassisk vis med enkel agurksalat, makrellen stekt slik at skinnet er sprøstekt og rømmesausen akkurat så rund og god i smaken den skal være.

Det går selvsagt an å filetere fisken, men jeg liker å servere den helstekt. Det er jo dessuten  lettere for kokken også (he he). Men for all del, liker du best å filetere fisken så gjør det. Beregn bare litt kortere steketid, og stek den bare på skinnsiden. Den er ferdig når fiskekjøttet skifter til en mer ugjennomsiktig farge.

Best resultat blir det om du bruker små makreller også kalt pir. Regn med en fisk til hver. Mange liker å la fisken surre i rømmesausen til den er gjennomstekt. Jeg liker bedre å steke fisken først slik at skinnet holder seg sprøtt. Og når fisken er ferdig tar jeg fisken ut av pannen og lager rømmesausen i den samme pannen etterpå. Det er selvsagt en smakssak, så gjør som du vil. Men jeg heier altså på varianten med sprøtt skinn. Uansett hva du velger, er stekt makrell med rømmesaus en sommerklassiker som etter min mening bør stå på menyen flere ganger i løpet av sommeren.

Er du så heldig at du har tilgang til en båt, er det jo selvfølgelig ekstra morsomt å fiske sin egen makrell, men det er også helt OK å søke fiskelykken i fiskedisken. Har du vært ute og fisket og fått mange makreller, er du kanskje interessert i flere makrelloppskrifter. Ingredienser

  • 4 små makreller
  • 2 ss hvetemel
  • 2 ts salt
  • rikelig nykvernet pepper
  • smør/margarin til steking
  • 2 slangeagurker
  • 1/2 dl vann
  • 1 ss edikk (7%)
  • 1 ss sukker
  • 2 ts salt
  • pepper
  • 1 beger seterrømme
  • gressløk
  • poteter til 4 personer

Fremgangsmåte

  • Vask agurken og kutt den opp i tynne skiver. Jeg liker å bruke ostehøvel til det.
  • Bland vann, edikk, sukker, salt og pepper i en serveringsbolle. Smak på dressingen og juster evt med mer syre, søtt eller salt. Ha oppi agurkskivene. Sett til side.
  • Bland hvetemel, salt og pepper og legg det på en tallerken.
  • Kok poteter.
  • Sløy makrellen og skjær av hodet.
  • Vend makrellen i melblandingen.
  • Stek makrellen i rikelig med smør på middels høy varme. Steketiden varierer med tykkelsen på fisken, men beregn ca. 5 minutter på hver side.
  • Ta den ferdig stekte makrellen ut av pannen og hell evt. litt av stekefettet ut dersom det er veldig mye.
  • Ha oppi rømmen og varm opp til den er helt flytende  og rykende varm.
  • Tilsett finhakket gressløk.
  • Server straks fisken med nykokte poteter, agurksalaten og rømmesausen,
