Dobbelt sjokoladebiscotti med appelsinsmak er nydelige sjokoladekjeks med hele sjokoladebiter og tydelig smak av appelsin. Sjokolade er godt og kombinert med appelsin er det enda bedre. Nettopp sjokolade og appelsin er etter min mening en himmelsk kombinasjon. Derfor synes jeg disse biscottiene ble rågode, og gjør plass til dem blant årets julekaker. Jeg har kalt disse lekkerbiskene for dobbelt sjokoladebiscotti med appelsinsmak ganske enkelt fordi det er kakao i deigen og også hele sjokoladebiter, altså to ganger sjokolade, og appelsin selvfølgelig.

Hjemme hos oss er vi ikke så store kakespisere, og hvert år går en hel del småkaker til småfuglene etter jul. Jeg har imidlertid en mistanke om at det ikke blir så mange igjen av disse. Kjeksene er ganske tørre, så aller best liker jeg  å dyppe dem oppi det jeg drikker ved siden av. De er helt perfekte til en kopp te eller kaffe. Det er bare å dyppe og spise. Å dyppe dem i litt portvin eller appelsinlikør er neppe så galt det heller, kan jeg tenke meg. Eller så er det jo Vin Santo da, som er tradisjon i Italia.

Det er altså sjokolade, appelsin og mandler som gir disse kjeksene god smak. I deigen er det skallet fra en appelsin og en spiseskje appelsinjuice. Det gjør at når jeg løfter lokket av kakeboksen kommer det en deilig, frisk duft av appelsin. Riv skallet på den fine siden av rivjernet, og ta kun med det oransje. Det hvite er bittert og egner seg best i marmelade.

Ingredienser

  • 100 gr romtemperert smør
  • 1,5 dl sukker
  • 2 ts vaniljesukker
  • 1 egg
  • skallet av 1 appelsinfint revet
  • 1 ss appelsinjuice
  • 4 dl hvetemel
  • 3 ss kakaopulver
  • 1 ts bakepulver
  • 75 gr mandler
  • 100 gr mørk sjokolade, grovhakket

Fremgangsmåte

Oppskriften gir ca. 60 kjeks.

  • Forvarm ovnen til 200 grader.
  • Pisk smør, sukker og vaniljesukker hvitt og luftig.
  • Ha i egget, appelsinskall og appelsinjuicen. Rør til det er blandet og tilsett melet, kakao og bakepulver. Bland alt godt.
  • Deigen skal ikke være for tørr. Er den klissetet tilsettes litt mer hvetemel.
  • Bland til slutt inn mandlene og hakket sjokolade.
  • Del deigen i tre emner og rull ut til pølser som er like lange som et stekebrett. Trykk pølsene litt flate. Sørg for at det er litt avstand mellom deigpølsene, for deigen kan flyte litt utover. Stek brødene midt i ovnen i 15-18 minutter.
  • Ta dem ut og skru temperaturen ned til 50 grader.
  • Mens de fortsatt er litt varme skjær brødene i skiver på ca. 1,5 c, på skrå.
  • Legg kjeksene tilbake på stekebrettet, og la dem tørke til de har blitt sprø. Det tar en drøy halvtime.

Oppbevares i kakeboks. Vel bekomme.

Dette har jeg lyst til å prøve. Jeg elsker sjokolade og appelsin i sammen, men jeg er ikke noe glad i mandler. Kan man erstatte de med noe annet?

Du kan jo prøve med valnøtter, eller kutte ut nøttene helt. Har ikke prøvd det selv men tror det skal gå bra. Jeg er forresten heller ikke så glad i mandler i kaker, men her synes jeg de gjør seg.

Hvordan er disse å oppbevare i gammeldagse høye glass med lokk over lengre tid? Eksempelvis norgesglass 🙂

Jeg pleier å oppbevare dem i en vanlig kakeboks, eller i Norgesglass. I Norgesglass er det viktig å passe på at det er strikk under lokket slik at det lukker helt tett igjen.
