Nøtter hører julen til, men det må jo nødvendigvis ikke være i form av nøtter i skallet. Personlig synes jeg det er noe svineri med disse nøttene som skal knekkes og skall som forviller seg mange andre steder enn i søppelbøtten til slutt. Da foretrekker jeg heller nøtter som er ferdig knekket og gjerne med litt mer smak på. Her har jeg brukt en oppskrift fra Ottolenghi. De har en helt riktig balanse mellom søtt, salt og passelig hot krydret. Kryddernøtter er deilig tiltygg til et glass vin, eller kan fint bare spises når du har lyst på noe godt. Disse nøttene er også en veldig fin vertinnegave å ta med seg når man er bedt bort.

Til disse kryddernøttene har jeg brukt en blanding av cachewnøtter, mandler, valnøtter, peanøtter og gresskarfrø, men her er det fritt frem for å bruke det du har og liker godt.

Ingredienser

  • 100 gr mandler
  • 50 gr valnøtter
  • 100 gr cachewnøtter
  • 100 gr peanøtter
  • 50 gr gresskarkjerner
  • 2 ss honning
  • 3 ss rapsolje
  • 1 ts salt + evt. mer til slutt
  • 1 kvist frisk rosmarin
  • 1/2 ts kajennepepper
  • 1/2 ss nykvernet pepper

Fremgangsmåte

  • Forvarm ovnen til 170 grader.
  • Varm honning og rapsolje forsiktig i en liten gryte på svak varme til honningen er helt smeltet.
  • Ta bladene av rosmarinen og finhakk dem.
  • Bland alle nøttene, saltet og rosmarinen i en bolle og hell over honning/oljeblandingen.
  • Rør godt så alle nøttene blir dekket av blandingen.
  • Spre nøtteblandingen utover en stekeplate kledd med bakepapir.
  • Stek nøttene i 15-20 minutter. Rør av og til slik at nøttene blir jevnt stekt på alle sider.
  • Nøttene er ferdige når de har fått en fin gyllen farge.
  • Ta ut og dryss over pepper og kajennepepper. Begynn forsiktig og ta heller mer på om du synes det blir tamt. Dryss også eventuelt med ekstra salt.
  • Avkjøl før nøttene legges i en lufttett boks.

Hei! Laget disse i går. Stemmer det at det skal være 1/2 ss av kajenne- og svart pepper? Turte ikke ta i alt, det var nok lurt. De ble rimelig sterke med litt mindre også…😮‍💨
