Mange av ritualene i julen dreier seg om mat på en eller annen måte. De fleste av oss er redde for ikke å ha nok mat, og ender opp med å kjøpe for mye. Det betyr rester av veldig mye godt, så da gjelder det å spise dem opp. Pinnekjøtt, ribbe eller kalkun på tredje dagen kan kanskje bli kjedelig, men det er mye godt det går an å lage av restene. Her kommer en oppskrift på salat med pinnekjøtt, og utover i julen vil jeg lage mer godt med restene, så følg med.

Denne salaten er veldig langt fra den tradisjonelle måten å servere pinnekjøtt på, men det er jo nettopp det som gjør at det blir lettere å spise restene neste dag, synes jeg. I denne salaten er det masse friske og litt eksotiske smaker, men også råvarer som det er veldig sannsysnlig at du har i hus. Det er forskjellige typer kål, nøtter, appelsiner og granateple. Jeg har brukt rosenkål og grønnkål, men andre kåltyper som rødkål, svartkål eller vanlig hodekål kan også brukes. Appelsinene og granateple kan erstattes med klementiner, ananas, mango eller annen frukt du måtte ha. Og nøtter, bruk det du har. Hele poenget er jo nettopp å bruke opp det som er i huset, og ikke kjøpe mer.

Salat med pinnekjøtt er en deilig kombinasjon av søtt, salt, surt, sprøtt og litt bittert. Så denne salaten har i grunnen alt.

Ingredienser

  • 400 gr kål, f.eks halvparten grønnkål og halvparten rosenkål
  • 2 appelsiner
  • 1/2 granateple
  • 1 håndfull hasselnøtter
  • 200 gr ferdig plukket pinnekjøtt
  • 4 ss appelsinjuice
  • 2 ts rødvinseddik
  • 4 ss olivenolje
  • 1/2 ts salt
  • nykvernet pepper
  • 1 kn kajennepepper

Fremgangsmåte

  • Rens kålen og gi den et kort oppkok. Den skal bare så vidt bli mør.
  • Skjær filetene ut av appelsinenen og klem juicen ut av det som blir igjen.
  • Hakk nøttene grovt.
  • Rens granateplet.
  • Sett grillen på i ovnen og varm opp pinnekjøttet.
  • Pisk sammen appelsinjuice, rødvinseddik, olivenolje, salt, pepper og kajennepepper til en vinaigrette.
  • Dander alt på en tallerken og hell dressingen over.

Server straks, mens kjøttet fortsatt er lunt.

Tips

Bruk det du har i huset. Bytt ut appelsin og granateple med annen frukt, og hasselnøtter med andre nøtter. Alle typer kål kan brukes og salat går også helt fint.
