Jeg er skikkelig glad i en god dip, for den kan brukes til så mye. Forskjellige typer snacks selvfølgelig, men like selvfølgelig er vel ulike grønnsaker, eller hvorfor ikke dyppe brød oppi. Eller kanskje rett og slett smøre dippen på brødskiva i stedet for smør. Eller bruke den som saus ved siden av kjøtt eller fisk. Som du skjønner er mulighetene nesten uendelig for en god dip. Denne gangen har jeg laget en paprikadip med valnøtter. Denne er laget etter inspirasjon fra den syriske dippen muhammara fra byen Aleppo.

Min variant er litt enklere og kan lages med ingredienser fra super’n på hjørnet. I den originale skal det være både granateplesirup og aleppopepper. Det er godt mulig at dette løfter dippen til et helt annet nivå, men jeg synes at min dipp også er nydelig. Dette er en dip der få ingredienser blandes sammen og blir til noe bedre enn sine enkeltkomponenter. I denne balanseres bakt søt paprika med frisk og syrlig sitron mens valnøtter gir konsistens og fylde. Dippen er super å smøre på brødskiva sammen med litt ost oppå, eller som tilbehør til stekt kylling.

For å få paprikadippen litt hot har jeg brukt cayennepepper, men hadde jeg hatt harissa ville jeg helt klart ha brukt det. Andre hotte sauser som sambal oelek eller shriracha kan også brukes til å spice den opp, om du vil det.

Jeg anbefaler å sette en skål paprikadip med valnøtter på bordet sammen med pitabrød, falafel, litt fetaost og oliven og vips så har du et lite mezemåltid. Bygg gjerne ut med flere småretter om du har tid eller lyst til det, men la denne dippen være i sentrum. Jeg lover deg – det vil du ikke angre på.

Ingredienser

  • 2 røde paprikaer
  • 2 never valnøtter
  • 1 sjalottløk
  • 1 fedd hvitløk
  • 2-3 ss sitronsaft
  • salt
  • pepper
  • cayennepepper
  • olivenolje (valgfritt)

Fremgangsmåte

  • Sett ovnen på 200 grader.
  • Vask paprikaene og del dem i to på langs og ta ut stilk og frøstanden.
  • Legg paprikaene i en ildfast form og smør med litt olje.
  • Bak paprikaene i ca. 45 minutter, de skal bli svarte i skinnet og falle litt sammen.
  • Når det er 10 minutter igjen legg valnøttene inn i ovnen også.
  • Legg de ferdig bakte paprikaene i en pose eller lufttett boks og la dem avkjøles der.
  • Når paprikaene er avkjølt, dra skinnet av.
  • Kjør paprika, nøtter, sjalottløk og hvitløk sammen til en glatt masse med blender eller stavmixer.
  • Smak til med salt, pepper, cayennepepper og sitronsaft.
  • Om du ønsker en fyldigere og litt løsere dip, kan du røre inn litt god olivenolje.
  • Ringle litt olivenolje på toppen og dryss gjerne litt hakkede nøtter eller ristede solsikkefrø på toppen.

Tips

Cayennepepperen kan erstattes med harissa.
