Aldri mer kjøpepitabrød om jeg ikke må. I dag bakte jeg for første gang pitabrød, og det ble uendelig mye bedre enn de man kan kjøpe. Jeg har ikke verdens største selvtillit når det gjelder baking, så jeg var veldig spent på om det ferdige resultatet ville bli et flatt rundstykke eller en lomme til å fylle godsaker i. Heldigvis ble det lommer akkurat slik jeg hadde ønsket meg.

Et pitabrød kan jo fylles med så mangt. For mange år siden var jeg på ferie i Istanbul. En dag tok jeg en båt oppover elva til Svartehavet. I den lille landsbyen som var endepunktet for ferga var det satt opp en mengde boder med en liten disk og en grill. Her grillet de småfisk som ble puttet i nystekte pitabrød med salat og en yoghurtdressing. Det var helt nytt for meg, men smakte deilig. På den måten fikk jeg erfare at det går helt fint å putte andre ting enn kebab i pitabrødet. I virkeligheten er det jo bare et brød man putter ting oppi i stedet for å legge ting oppå. Vi bruker som regel enten kjøttsaus eller seibiff oppi, men jeg kan tenke med at stekt småmakrell med agurk og rødløk eller roastbeef og roquefort eller en vegetarvariant med hummus vil smake fortreffelig også.

Uansett må brødene bakes først og vanskelig var det ikke å lage dem.

Ingredienser

  • 5 dl vann
  • 25 gr. gjær
  • 5 dl hvetemel
  • 5 dl sammalt hvete
  • 1/2 ts salt

Fremgangsmåte

Oppskriften gir 12 pitabrød.

  • Varm vannet opp til 37 grader og rør inn gjæren.
  • Bland mel og salt i en stor bolle og hell i vann-gjærblandingen.
  • Elt til en smidig deig og la den heve til dobbel størrelse.
  • Sett ovnen på 250 grader.
  • Del deigen i 12 emner som kjevles ut til små rundinger med en diameter på 12-15 cm.
  • Stek i 7-8 minutter.
  • Pitabrødene vil ikke ese utover, men etter noen minutter begynner de å blåse seg opp.

Ta ut av ovnen og avkjøl på rist og server deretter med ønsket tilbehør.
