I disse hjemmetider har jeg inntrykk av at «alle» baker brød. Det gjør vi også. Jeg har en surdeig i kjøleskapet klar til å bake med, men nå får den hvile litt. For vi baker også med gjær. I de siste ukene har dette brødet blitt en fast følgesvenn. Oppskriften fant jeg en gang i Dagens Næringsliv da det gikk en liten serie kalt Sverres bakeskole eller noe i den duren. Og Sverre – det er altså Sverre Sætre det er snakk om. Enkelt hverdagsbrød er nettopp det – usedvanlig enkelt å få til. Alt det krever er at du rører sammen ingrediensene om kvelden og steker det neste morgen. Det er med andre ord et eltefritt brød. Men selv om det er svært enkelt å lage, smaker kjempegodt.

Det tar altså ikke stort mer enn 5 minutter å røre sammen brødet. Det er jo vel og bra, men det som virkelig har revolusjonert det hjemme hos oss, er at når vi har rørt sammen deigen og hatt den oppi en smurt form, setter vi det rett inn i ovnen. Ovnen har nemlig en funksjon med tidsforskyvning. Det betyr at brødet kan stå å heve inni ovnen hele natten, og så på morgenkvisten slår ovnen seg på helt av seg selv. Når vi kommer tuslende ut på kjøkkenet er brødet i ferd med å bli ferdigstekt og det lukter herlig. Nybakt brød til frokost nesten uten å røre en finger – hvis ikke det er luksus, så vet ikke jeg. Da spiller det ingen rolle at det kalles enkelt hverdagsbrød, for meg er det i hvert fall enkel hverdagslykke.

Det går fint å justere litt på oppskriften. En gang hadde jeg en liten rest av potetstappe i deigen. Det gikk fint det, bortsett fra at jeg hadde glemt at det var hvitløk i stappen, så det ble hvitløksbrød. Ikke helt topp med brunost og syltetøy, for å si det sånn. Denne gangen hadde jeg oppi et par never med solsikkefrø. Det var mer vellykket, for å si det sånn.

Ingredienser

  • 350 gr hvetemel
  • 100 gr grovt sammalt hvete
  • 50 gr fint sammalt hvete
  • 2 never solsikkefrø (valgfritt)
  • 1 ts salt
  • 1 ts sukker
  • 1/2 ts tørrgjær
  • 4 dl kaldt vann
  • smør til formen

Fremgangsmåte

  • Mål opp alle tørre ingredienser i en bolle.
  • Hell oppi vannet og rør til alt er godt blandet
  • Smør en 2 l brødform godt.
  • Sett til side og la brødet heve natten over (8-12 timer).
  • Stek brødet i en knapp time på 200 grader fra kald ovn, eller 45 minutter dersom ovnen er forvarmet.
  • Straks brødet er ferdig tas det ut av formen og avkjøles på rist

Tips

Brødet er halvgrovt, to av fire på brødskalaen.

Hei,
Takk for mange fine oppskrifter!
Jeg har et spm ang denne:
Skal/bør brødet heve over natten i formen det skal stekes i? Jeg er så vant til å lage eltefrie brød i gryte, og da skal jo deigen stå i bakebollen over natta før den brettes osv . Min ovn er ikke så 2020 at jeg kan stå opp til nybakt brød, så hva er da beste fremgangsmåte?

Hei Hildegunn, jeg hever dette brødet i brødformen uansett. Har du ikke ovn som kan programmeres, så er det bare å heve det på kjøkkenbenken og sette inn i ovnen neste morgen. Det går absolutt like fint. Vi gjør det når vi er på hytta. Da lager jeg forresten melblandingen ferdig hjemme før vi drar, så det bare er å tilsette vann og smøre formen når vi er på hytta. Det er en utrolig enkel måte å få nybakt brød på :). Lykke til med brødbaksten.
