Ovnsbaking av grønnsaker får virkelig det beste frem i dem. I aspargesen er det mye godt allerede i utgangspunktet. Jeg er fortsatt på en asparges mission, og ville prøve om ovnsbaking kunne gjøre aspargesen enda bedre. Fra tanke til handling var det kort vei. Aspargesen ble lagt i en form og dryppet med olivenolje og litt flaksalt og så inn i ovnen. Etter en omgang i ovnen, ble aspargesene usedvanlig søte og konsentrerte i smaken. Så har du lyst på et alternativ til koking/damping kan ovnsbakt asparges absolutt anbefales.

Som følge til den konsentrerte aspargessmaken valgte jeg i dag en myk og syrlig chevre og sprøstekte smuler av rugbrød for å skape litt kontrast på tallerkenen. Det viste seg å være en veldig god kombinasjon. Litt god olivenolje på toppen gjorde ikke akkurat smaken verre.

Ingredienser

  • 1 bunt grønne asparges
  • 50 gr chevre
  • 1 skive rugbrød
  • olivenoje til steking
  • salt og pepper
  • god olivenolje
  • flaksalt

Fremgangsmåte

  • Forvarm oven til 200 grader.
  • Rens aspargesen og skjær av den nederste hvite/lilla delen.
  • Legg aspargesen i et ildfast fat og drypp over litt olivenolje og flaksalt.
  • Bak i ovnen i ca. 10-12 minutter.
  • I mens smuldre opp brødet og stek smulene i litt olivenoje til det er gyllent og sprøtt.
  • Smuldre opp osten.
  • Anrett aspargesene på en tallerken og legg ost og smuler oppå. Ringle over litt god olivenolje og dryss litt flaksalt på toppen.

Server som en egen lunsjrett med godt brød ved siden av, eller som tilbehør til stekt eller grillet kjøtt.
