Det begynner å bli skikkelig mørkt og kaldt ute nå. Da er det hyggelig å invitere venner og familie hjem til et hyggelig måltid. Når jeg gjør det synes jeg det er fint å tilby et glass med noe godt å drikke og gjerne noe smått å tygge på ved siden av. Det er en fin start på kvelden og dersom gjestene er veldig sultne kan det ta toppen av sulten hvis maten ikke er helt klar med en gang. Det kan være oliven, nætter, litt spekeskinke, ost eller noe hjemmebakt som grissini eller små ostebakkels.

Ostebakkels er rett og slett små vannbakkels uten sukker men med revet ost rørt inn i røren. De er ganske enkle å lage, kan forberedes eller lages på forhånd og har en nydelig mild ostesmak. Ostebakkels serveres gjerne lune enten som de er, eller fylt med et deilig fyll. Og fyllet kan være så mangt. Det er vel nesten bare fantasien som setter grenser her. Eksempler på fyll kan være ostekremer av ulike slag. litt laksemousse, litt stekt sopp, eller som her på bildet; kremost og kokt skinke som er kjørt samen med en stavmixer.

Disse er som sagt lette å lage i stand på forhånd. Enten kan deigen lages klar og legges i en sprøytepose i kjøleskapet og bare sprøytes ut og stekes rett før gjestene kommer. Alternativt kan de stekes ferdige og så varmes opp rett før servering.  På begge disse måtene slipper du å stå å bakse noe særlig rett før gjestene kommer, men kan allikevel by på nybakte lekkerbiskner.

Ingredienser

  • 1,25 dl vann
  • 1,25 dl melk
  • 110 gr smør
  • 1 klype salt
  • 2,5 dl hvetemel
  • 4 store egg
  • 100 gr revet gruyere
  • nykvernet pepper
  • malt muskat

Fremgangsmåte

  • Forvarm ovnen til 200 grader
  • Kok opp vann, melk, smør og salt i en gryte.
  • Tilsett melet og rør til deigen samler seg og slipper kantene.
  • Flytt deigen over i en bolle og vent ett minutt til deigen har kjølt seg ned litt
  • Rør eggene inn i deigen, ett om gangen og pass på at hvert egg blir fullstendig blandet inn i deigen før et nytt tilsettes.
  • Rør inn osten og litt pepper og malt muskat.
  • Ha deigen over i en sprøytepose med en tyll med rund åpning.
  • Sprøyt ut valnøttstore biter med 5 cm mellomrom på en stekeplate kledd med bakepapir
  • Stek i ca. 20 min eller til ostebakkelsene har blåst seg opp og blitt gyllne.

Tips

Dette er en ganske stor deig. Du kan gjerne fryse ned halvparten i en sprøytepose. Ta den da opp i god tid før du skal steke slik at den rekker å tine helt. Sprøyt ut og stek på samme måte. Det går også an å fryse ned ferdig stekte ostebakkels. Tin og varm opp til de har blitt glovarmei ovnen igjen før servering.
