Tenk deg at du sitter på en fortausrestaurant i en liten by i Italia og har bestilt et glass vin. Kelneren kommer med glasset balansert på et brett. Han kommer ikke bare med vinen, men også med et eller annet å tygge på ved siden av. Det kan være noen oliven, en ostebit, litt salami eller kanskje noen brødpinner, eller grissini som det heter i Italia. For disse tynne pinnene av nybakt brød er perfekt tilbehør til litt god drikke. De kan være au naturelle, eller de kan ha en smakstilsetning som her; grissini med salt og rosmarin. Det er en av mine favorittvarianter.

Nå trenger du absolutt ikke å sitte på en fortausrestaurant eller være i Italia for den saks skyld for å nyte grissini. De er ganske så enkle å lage selv, og smaker uendelig mye bedre enn de man kan kjøpe i butikken. Grissini er ypperlig følge for supper, gryteretter eller til tapas, eller antipasti som de sier i Italia.

Grissini med salt og rosmarin er ganske enkle å lage. Deigen blir nokså fast og formes til et rektangel før det legges til heving. Og så, i stedet for å rulle ut hver brødpinne, skjæres rett og slett rektangelet opp i tynne strimler som bare dras litt i for å få ønsket lengde.

Ingredienser

  • 40 stk.
  • ---
  • 500 gr hvetemel (gjerne tipo 00)
  • 2,7 dl lunkent vann
  • 10 gr. fersk gjær
  • 2 ts sukker
  • 10 gr salt
  • 50 gr olivenolje
  • flaksalt
  • rosmarin
  • 1 ss durumhvete (hvis du har)

Fremgangsmåte

  • Begynn med å blande vann, gjær og sukker, og la det stå i 10 min.
  • Ha hvetemel og salt i en bolle.
  • Tilsett vannet og oljen i melet og bland godt.
  • Elt deigen til den har blitt elastisk.
  • Form deigen til et rektangel (ca. 40x15 cm).
  • Dryss durumhvete på benken og legg deigleiven oppå og og pensle med litt olivenolje. Alternativt kan du sikkert legge deigen på et bakepapir, eller drysse vanlig mel under deigen.
  • La deigen heve i minst 1 time.
  • Sett ovnen på 200 grader.
  • Dryss salt og rosmarin på deigen og skjær den i 40 tynne strimler.
  • Løft hver strimmel ved å ta i hver ende og dra i strimlen til den blir like lang som stekeplanten.
  • Stek grissiniene på 200 grader i 18-20 minutter. De skal bli gylne og litt sprø.
  • Avkjøl på rist.
