Årets sommerferie ble som de foregående delvis tilbragt i Italia. En stor del av måltidene ble inntatt på forskjellige restauranter – både på enkle trattoria’er og osteria’r og på finere restauranter. På de aller fleste stedene sto det grissini på bordet da vi satte oss ned. Grissini er tørre brødpinner som man kan tygge på mens man studerer menyen. Som regel var disse grissiniene fabrikkprodusert og sto i et glass midt på bordet pakket inn to og to i papir, omtrent som spisepinner på en enkel kinarestaurant her hjemme. Disse fabrikkpinnene er helt greie dersom man er sulten, men ved et par tilfeller var de bakt på restauranten og da var det noe ganske annet. Da er det plutselig ikke vomfyll lenger, men deilige bakverk smaksatt med salt, rosmarin, sesamfrø eller ost.

Jeg har siden i sommer syslet med tanken på å gjenskape disse gode  grissinienen, eller brødpinnene hjemme. I kokeboken»Italia» av Dag Tjersland m.fl. er det en variant «Grissini som på Baltazar». Dette er grissini med parmesan. Jeg tok utgangspunkt i denne oppskriften, men reduserte mengden parmesan og salt. Til gjengjeld penslet jeg grissiniene lett med olivenolje og strødde med fingersalt før jeg satte dem inn i ovnen. Resultatet ble veldig bra. Mine grissini fikk en svak smak av osten og jeg synes det er nok. Dersom du vil ha en mer tydelig ostesmak, kan du doble mengden parmesan slik det er i den opprinnelige oppskriften.

Denne oppskriften er imidlertid ikke noe for den som er ute etter noe som raskt kan slenges sammen og på bordet på et blunk. To og en halv time heving og baketid i tillegg gjør dette til ekte slowfood. På den positive siden kan det imidlertid anføres at deigen var veldig fin å arbeide med, selv for en som absolutt ikke er noe bakefantom.

Ingredienser

  • 500 gr hvetemel
  • 3 dl melk
  • 70 gr smør
  • 30 gr gjær
  • 25 gr fint revet parmesan
  • 1 ts salt

Fremgangsmåte

Oppskriften gir ca. 40 grissini

  • Bland parmesan, mel og salt i bakebollen
  • Smelt smøret og ha oppi melken.
  • Løs opp gjæren i melkeblandingen.
  • Hell det våte i det tørre og elt til deigen er smidig.
  • Dekk deigen til og sett til heving en halvtime på kjøkkenbenken.
  • Sett så deigen kaldt og la den heve en time til. Kaldhevingen skal gjøre utrullingen enklere.
  • Rull deigen ut i blyanttynne pølser som er like lange som kortsiden på stekebrettet.
  • Dekk deigpølsene til og la det etterheve en time til.
  • Forvarm ovnen til 170 grader.
  • Stek brødpinnene i ca. 18 minutter, eller til de er gyllenbrune.
