Nå har det vært flere dager med tjukk tåke, og veldig lite fristende å ta seg en tur ut. Så for å motivere meg lagde jeg i helgen noen skikkelig digge bjørnebærsnurrer med sitron.  Og for å si det sånn. De er definitivt verdt en tur ut i ertesuppa. Disse snurrene er laget etter samme prinsipp som vanlige kanelsnurrer, men her er kanelfyllet byttet ut med bjørnebærsyltetøy og fint revet sitronskall. Det viste seg å være en forbløffende god kombinasjon. Det søte og litt syrlige syltetøyet fikk virkelig et løft av litt frisk sitron.  Det minner meg om at noen ganger er det ikke så store ting som skal til for å løfte smaken mange hakk.

Bjørnebærsyltetøyet har jeg fått som en del av «I love fruit and veg from Europe» kampanjen. Det er et EU støttet initiativ som har til hensikt å øke forbruket av frukt og grønt fra EU. Det er 3 italienske produsentorganisasjoner som står bak. Formålet er altså å få folk til å spise mer frukt og grønt fra Europa, og mitt bidrag består i at jeg hver måned får en kurv med frukt og grønnsaker som er i sesong akkurat da, og så skal jeg lage oppskrifter ut fra de råvarene. Og denne gangen ble det altså bjørnebærsnurrer med syltetøy av bjørnebær. For ordens skyld, så får jeg ikke betalt for dette, utover råvarer.

Jeg er på ingen måte noen mesterbaker. Så oppskriften på selve deigen har jeg lånt fra krem.no.  Resultatet ble skikkelig myke, fluffy og saftige boller, så denne deigen kan varmt anbefales. Den er bakt med den såkalt tangzhong teknikken, eller tjohei, som jeg kaller det. Greier aldri å huske hva den heter, nemlig.

Ingredienser

  • 40 gr hvetemel
  • 200 gr melk
  • ---
  • 460 gr hvetemel
  • 1 dl sukker
  • 2 ts kardemomme
  • 20 gr gjær
  • 175 gr kald melk
  • 75 gr smør
  • --
  • 1 glass bjørnebærsyltetøy (230 gr)
  • 1 sitron, skallet fint revet
  • 1 egg til pensling
  • perlesukker (kan droppes)

Fremgangsmåte

  • Kok opp mel (40 gr) og melk (200 gr) under omrøring til det tykner. Sett jevningen til side og la den avkjøle litt.
  • Bland resten av hvetemelet, sukker, kardemomme, gjær (smuldret) og melk med jevningen i en kjøkkenmaskin. Elt i ca. 10 minutter på middels hastighet.
  • Skjær smøret i småbiter og tilsett i deigen. Elt i ytterligere 5 minutter på middels hastighet. Skru hastigheten opp på max og elt i 4-5 minutter til.
  • Deigen er nå ferdig eltet og settes til heving i ca 1 time eller til den har blitt omtrent dobbelt så stor.
  • Sett ovnen på 225 grader.
  • Hvelv deigen ut på benken og rull den ut til et rektangel på ca. 40-25 cm.
  • Smør syltetøyet utover leiven, men la ca. 5 cm av den ene langsiden være uten syltetøy.
  • Fordel revet sitronskall utover syltetøyet.
  • Rull sammen leiven til en lang pølse, der du avslutter med stykket uten syltetøy på.
  • Skjær pølsen i 2 cm stykker og sett på bakebrett kledd med bakepapir.
  • Pensle med sammenpisket egg og dryss evt. over litt perlesukker til pynt.
  • Stek i ca. 10 minutter og avkjøl deretter snurrene på rist.
