Hallo, klippekrans med eplemos – det er godt det. Det hele begynte med noen epler på fruktfatet som strengt sagt hadde sett sine beste dager. Skallet var begynt å rynke seg litt, men det var for så vidt ikke noe galt med eplene. Det er bare det, at av erfaring vet jeg at det ikke er noen her i huset som har lyst til å spise frukten når den har passert toppen. I stedet for å kaste eplene bestemte jeg meg for å lage bakt eplemos av dem.  Ikke er vi noen syltetøyfamilie heller, men i gjærbakst visste jeg at det ville skli ned, og det gjorde denne klippekransen. Den ble aldeles nydelig og forsvant nesten som dugg for solen. Jeg fikk bare reddet litt som gikk i fryseren til en annen dag.

På kransen har jeg brukt perlesukker, og det har jeg kjøpt i Sverige. Der har de nemlig perlesukker som her hvitt og ikke blankt som i Norge. Det smaker det samme, men ser litt fjongere ut synes jeg. Det går selvsagt helt fin å bruke den norske varianten, eller å droppe perlesukkeret helt og heller ha på litt melisglasur. Godt blir det uansett.

Ingredienser

  • 100 g smør
  • 3,5 dl melk
  • 50 g gjær
  • 1 dl sukker
  • 1 ts kardemomme
  • 500-600 g hvetemel
  • --
  • 2,5 dl eplemos
  • --
  • 1 sammenpisket egg til pensling
  • perlesukker

Fremgangsmåte

  • Begynn å lage deigen. Smelt smøret og bland inn melken. Rør ut gjæren.
  • Mål opp og bland de tørre ingrediensene i en bolle.
  • Tilsett gjærblandingen og rør det godt sammen. Elt deigen til den smidig.
  • La deigen heve i 45 minutter.
  • Tøm deigen ut og kjevle til et rektangel som er ca. 60 cm langt og 25 cm bredt.
  • Smør eplemosen utover leiven og rull den sammen fra den lange siden til en fast pølse.
  • Legg deigpølsa over på et bakebrett og form som en krans.
  • Klipp dype hakk i deigen med ca. 1 cm tykkelse rundt hele.
  • Brett «bladene» ut vekselvis til høyre og venstre.
  • Etterhev i ca. 30 minutter.
  • Pensle med egg og dryss på perlesukker og stek på 200 grader i 25-30 minutter.

Ta ut og avkjøl litt før den serveres.

Tips

Det tar verken særlig lang tid, eller er komplisert å lage eplemos, og det er utrolig godt. Men det går selvsagt like fint med kjøpt eplemos.
