Ute i hagen står epletreet tunge av røde vinterepler. De første begynner å bli moden nå. Det er imidlertid ennå noen uker de den store hopen er klar til å høstes. Inntil da kan jeg imidlertid kose meg med å lage bakt eplemos eller som da dag da jeg har lagd bakte epler med mandelfyll av de få som er modne nå. Dette er en super dessert.  Bakte epler med mandelfyll er enkelt å lage med ingredienser de fleste har hjemme allerede. Vi snakker smør, sukker kanel og en håndfull mandler. Men den er allikevel usannsynlig god og passer like godt på en hverdag som til fest. Server gjerne sammen med en kule vaniljeis, og lykken er fullkommen.

Dersom du ikke er så heldig å ha tilgang til et epletre, er det fortsatt masse norske epler i butikken. Kanskje er du så heldig å ha en nabo med et bugnende epletre. Jeg tror de færreste klarer å spise opp alle eplene selv. Derfor er mange takknemlig om noen tilbyr seg å hjelpe til. I hvert fall synes jeg det er lite som er så trist som at epler henger på trærne og råtner utover vinteren. Så moralen er altså: spør naboen dersom du ser at treet er tunge av frukt.

Ingredienser

  • 4 epler
  • 50 gr mandler, finhakket
  • 2 toppede ss sukker
  • 1 ts kanel
  • 30 gr mykt smør

Fremgangsmåte

  • Sett ovnen på 180 grader.
  • Bland finhakkede mandler, sukker, kanel og smør til det blir en jevn masse.
  • Vask eplene godt. Skjær ut kjernehuset, men forsøk å ikke lage hull tvers igjennom (da vil bare smøret renne ut i bunnen.
  • Fordel mandelblandingen i eplene og sett dem i en ildfast form i ovnen.
  • Stek i 20-25 minutter. Steketiden vil avheng av størrelsen på eplene. De skal være helt myke, men ikke falle sammen.
  • Ta ut av ovnen.

Server eplene lune med vaniljeis ved siden av.
