Her kommer en deilig høstoppskrift, nemlig andebryst med eple. Dette ble en usedvanlig god kombinasjon. De friske eplene var en nydelig kontrast til det smakfulle andekjøttet. Sprøstekte potetbiter ved siden av gjorde definitivt ikke saken verre. Dette er rett og slett et seriøst, solid godt måltid. Eplene jeg brukte kommer fra hagen og er av typen Ingrid Marie, men andre smaksrike faste epler kan også brukes.

Ingredienser

  • 2 andebryst
  • salt og pepper
  • 2-3 epler
  • 1 ss smør
  • salvie
  • 1 dl eplejuice
  • 800 gr kokefaste poteter

Fremgangsmåte

  • Skjær ruter i fettlokket på andebrystene, men pass på å kun skjære i fettet og ikke i kjøttet under.
  • Gni inn salt og pepper på begge sider av andebrystene.
  • Skrell epelene og skjær dem i små terninger, sett til side.
  • Skrell potetene og skjær dem i store terninger. Sett ovnen på 200 grader varm luft.
  • Legg andebrystene med fettsiden ned i en kald stekepanne og skru på middels til høy varme.
  • Stek andebrystene til fettet har blitt gyllent og sprøtt.
  • Snu andebrystene og stek til de har fått en kjernetemperatur på 58 grader. Ta dem av varmen og hold dem varme.
  • Kok potetterningene i 7 minutter. De skal ikke være møre helt gjennom, men ha begynt å bli litt myke på utsiden.
  • Hell av vannet. Damp potetterningene litt og sett på lokket og rist godt slik at potetbitene blir litt "lodne" utenpå.
  • Legg over i et ildfast fat og ta litt av andefettet og bland inn i potetene. Dryss på salt og pepper og stek i ovnen i ca. 20 minutter. Til potetterningene er sprø og gylne.
  • Stek epleterningene i smøret til de er knapt møre. Tilsett hakket salvie og eplejuice og la det koke inn. Smak til med salt og pepper.

Skjær andebrystene i skiver og server sammen med potetene og eplene. Kokte aspargesbønner passer fint ved siden av. Det kan også en frisk grønn salat med en god vinaigrette med mye syre.
