Crispy duck har i løpet av det siste året blitt en skikkelig kosematfavoritt hjemme hos oss.  Det er lettvint nok til at det passer på en fredagskveld og det smaker utrolig godt.  For her snakker vi smaksrikt andekjøtt, sprøtt skinn og knasende grønnsaker toppet med aromatisk hoisinsaus før det pakkes inn i tynne pannekaker.

Tradisjonelt er det en diger jobb som går over to dager – å lage crispy duck. Det inkluderer også en hel and. Dette er ikke noe jeg ønsker å gjøre i utrengsmål, men det går fint an å lage en det mye enklere variant. Det går fint an å få det til på et par timer og med kanskje 30 min aktivt arbeid. Andelårene stekes lenge i ovnen og passer seg defor selv. Det er forresten ganske fasinerende å se hvor mye fett som renner av lårene i løpet av steketiden. Du kan droppe å five-spice krydder og istedet velger å krydre med salt og pepper,. Da sitter du igjen med et fett som er ganske nøytralt og aldeles nydelig til å steke poteter i.

Pannekakene som brukes til å pakke inn godsakene kan sikkert lages hjemme, men det har jeg aldri prøvd. Jeg kjøper ferdige pannekaker i butikker som selger asiatiske varer. Litt må det jo være greit å kjøpe ferdig, og for en som ikke liker å steke pannekaker (kremt) er det jo en strålende løsning.

Dersom du vil bygge ut måltidet kan du jo servere ris ved siden av, og kanskje starte med en liten pekingsuppe først.

Fremgangsmåte

  • Forvarm ovnen til 170 grader.
  • Gni andelårene inn med salt of 5 spice krydder og legg i et ildfast fat. Stek i 2 timer .Skru på varmluft de siste 10 minuttene for å få ekstra sprøtt skinn.
  • Ta lårene ut av ovnen og riv kjøttet fra hverandre med to gafler.
  • Skjær grønnsakene i tynne strimler.
  • Varm opp pannekakene som beskrevet på pakken. Vanligvis dampes i noen minutter.
  • Server andekjøtt, grønnsaker i pannekakene med hoisinsaus.

Tips

Får du ikke tak i 5 spice krydder, kan du droppe det og bruke salt og pepper i stedet.
