Kineserne har mange deilige supper, og en av dem er definitivt wontonsuppe. Etter sigende skal wonton bety «spise skyer». Det høres veldig poetisk ut, og kanskje minner de små pastapakkene litt om skyer der de dupper rundt i suppen. Om betydningen er riktig vet jeg ikke, men det er i hvert fall en fin historie å fortelle over suppebollene ved middagsbordet.

Jeg elsker å spise suppe. Når det står suppe på menyen er jeg skikkelig glad. I dag er det skikkelig dårlig vær, faktisk er det den første høstdagen med vind, regn og kaldt. Da er det etter min mening lite som er bedre enn å være inne og spise en deilig rykende varm bolle med suppe.

Wontonsuppe har jeg tidligere bare spist på restaurant, men nå hadde jeg altså bestemt meg for å forsøke denne retten hjemme. Jeg hadde gått til innkjøp av wontonark og de øvrige ingrediensene. La meg si det med en gang, det er ikke vanskelig å lage wontonsuppe, men litt tidkrevende er det. Selve suppen er uhyre enkel, det er de små pastapakkene med kjøttfyll som tar tid å lage. Det er flere måter å brette disse pakkene på. En måte er å brette dem så de ser ut som små sykepleierhatter, en annen er å ganske enkelt samle alle hjørnene og vri sammen som et knytte. Bruk vann til å lime sammen pakken med uansett hvordan du velger å lage pakkene.

Ingredienser

  • 1 pk wontonark
  • 400 gr. svinekjøttdeig
  • 1 ss soyasaus
  • 1 ss østerssaus
  • noen dråper sesamfrøolje
  • 1 ss hvitvin
  • 1 ts maizenamel
  • nykvernet pepper
  • --
  • 2 liter hønsebuljong
  • 1 bunt vårløk
  • 10 cherrytomater
  • koriander til pynt
  • --
  • soyasaus
  • sterk chilisaus

Fremgangsmåte

  • Bland kjøttdeigen godt med soya, østerssaus, hvitvin, sesamfrøolje, pepper og maizenamel.
  • La den gjerne stå og trekke en time i kjøleskapet slik at smakene får blandet seg skikkelig.
  • Legg en teskje kjøttdeig midt på et wontonark. og brett til et knytte eller "sykeplerierhatt".
  • Gjør det til all kjøttdeigen er brukt opp.
  • Imens du bretter, sett over en stor gryte med vann.
  • Kok ca. 10 wonton'ene av gangen i ca. 5 minutter.
  • Når de er ferdigkokte, ta dem opp med en hullskje og legg dem i kaldt vann for at de ikke skal klistre seg sammen.
  • Fortsett med en ny omgang til alle wonton'ene er kokt.
  • Kok opp kyllingbuljongene og ha i vårløk og cherrytomater og deretter wonton'ene.
  • Varm forsiktig opp og server rykende varm med koriander.

Sett også sterk chilisaus og soyasaus på bordet slik at alle kan smake til suppen sin slik de selv liker best.
