Hvis du kommer fra Østlandet og er over 50 år eller likte historiene om Elling og Kjell Bjarne, så har du kanskje et forhold til flesk og duppe. Dette var nemlig en populær middagsrett for et par generasjoner siden på Østlandet. Jeg vokste opp med en farmor som lagde det av og til. Og det er kjempegodt. Dersom du ikke kjenner til retten, så er det altså lettsaltet sideflesk som blir stekt gyllent. Stekefettet brukes til å lage en hvit saus med masse smak. Så serveres det med poteter og oftest kålrabistappe. Jeg synes imidlertid det blir litt fargeløst på tallerkenen med kålrabistappe så jeg bytter den ut med moste erter i stedet. Dette er solid husmannskost på sitt beste.

Det er ikke så mange som spiser flesk og duppe nå lenger og det er kanskje ikke så rart. Sidefelsk forsvant vel fra norske middagsbord da fett ble fy-fy mat en gang i forrige århundre. Så kom jo poteter også i skammekroken sammen med hvetemel, og da var det jo i grunnen ikke så mye igjen av denne retten. Men jeg synes det er på høy tid å børste støv av denne flotte hverdagsretten, for den er skikkelig god og enkel å lage.

Ingredienser

  • 600 gr lettsaltet sideflesk
  • smør til steking
  • 3 ss hvetemel
  • 5 dl melk
  • 1 bunt gressløk
  • poteter til 4
  • 1 pose frosne erter

Fremgangsmåte

  • Forvarm oven til 100 grader.
  • Skjær sideflesket i 1 cm tykke skiver.
  • Sett potetene på koking.
  • Smelt smøret i en stekepanne og stek skivene til de er gyllne.
  • Legg over i et ildfast fat og hold det varmt i ovnen.
  • Kok pannen ut og hell innholdet over i en liten gryte.
  • Rør ut melet i fettet og spe med melken. La det koke til melsmaken er borte. Ca. 5 min.
