Peking, Beijing, hot and sour. Kjært barn har mange navn, og det har denne suppen også. Dette er helt klart en stor favoritt, så hver gang jeg er på en kinesisk restaurant, må jeg ha Pekingsuppe. Men denne suppen er slett ikke vanskelig å lage  I dag begynner kinesisk nyttår, og da passer det jo godt med en suppe oppkalt etter landets hovedstad.

Pekingsuppe er en fin forrett og passer veldig fint før for eksempel vårruller eller en wokrett. Oppskriften nedenfor er ment som en forrett. Skal det være hovedretten, vil jeg nok anbefale å doble oppskriften og kanskje servere ris ved siden av.

Feiring av nyttår er en alvorlig affære i Kina, og for mange kinesere er det den viktigste høytiden og ferien. Litt som julen hos oss og Thanksgiving for amerikanerne. Mange reiser langt for å feire nyttår sammen med familien sin. Måltidene er en stor del av feiringen, og det er mange tradisjoner knyttet til hva man skal spise. Så vidt jeg har bragt på det rene, er pekingsuppe slett ikke en av de tradisjonelle rettene. Men jeg synes altså at den er så god at det får være min markering av høytiden.

Et kinesisk nyttårsmåltid skal bestå av flere forskjellige retter som hver især har sin symobolske betydning som rikdom, fremgang, lange liv og gode familieforhold. Det  er vanlig å spise er blant annet dumplings, helstekt fisk, vårruller, lange nudler, appelsiner og andre sitrusfrukter (good fortune fruit), sticky rice kake og søte risboller.

Ingredienser

  • 1 fedd hvitløk
  • 1 rød chili
  • 1 ss finhakket ingefær
  • 2 ss nøytral olje
  • 1 l hønsebuljong/-kraft
  • 1 ss soyasaus
  • 1 ss riseddik
  • 2 ts maizena + litt vann
  • 1 liten boks bambusskudd
  • 1 dl erter
  • 4 vårløk
  • 5 aromasopp/sjampinjong
  • 100 gr kokt skinke
  • 1 egg
  • sriracha (evt.)

Fremgangsmåte

  • Finhakk hvitløk, chili og ingefær og fres det i oljen sammen med vårløken skåret i ringer.
  • Tilsett kyllingbuljong, soyasaus og riseddik. Suppen skal være skarp og med et tydelig sting, men hvor sur og sterk bestemmer du, så smak på suppen og juster til den er passe for deg. La det koke i 2-3 minutter
  • Skjær soppen i skiver og bambusskuddene i tynne strimler og ha det oppi suppen. Kok i ytterligere 3 minutter
  • Skjær skinken i strimler og ha oppi suppen. Tilsett også ertene. Rør ut maizenaen i litt vann og hell i suppen og kok i ett minutt
  • Pisk sammen egget og hell det i en tynn stråle oppi den kokende suppen.

Server straks, vel bekomme.

Tips

Det er ganske vanlig å ha tofu i pekingsuppe, så det kan du gjerne tilsette om du ønsker.
