Jeg har fått helt dilla på ovnsbaking av grønnsaker. Det konsentrerer sødmen i grønnsakene og gjør dem i mine øyne (eller skal jeg si gane) ekstra gode. Da jeg så en pakke lekre regnbuegulrøtter i butikken var jeg solgt. Jeg måtte bare kjøpe dem, og visste straks at jeg skulle bake dem i ovnen. Jeg har tidligere ovnsbakt vanlige gulrøtter med miso, ingefær og chili, altså en ligg asiatisk vri. Denne gangen gikk jeg for en mer europeisk variant og lagde ovnsbakte regnbuegulrøtter med smør og timian og salt. Det ble en vellykket kombinasjon, mye fordi det smeltede smøret fikk en nøtteaktig smak og sammen med saltet spilte de virkelig på lag med regnbuegulrøttene.  Timianen og sitronen bidro til å løfte smakene ytterligere ved å bidra med et friskt element.

Disse gulrøttene står helt fint på egne ben. Server dem sammen med godt brød, smør og en deilig grønn salat, og du har en flott vegetarisk lunsj. De vil også være en flott rett å sette på et koldtbord ved siden av roastbeef eller skinke. Dessuten vil de være fantastisk tilbehør til all slags kjøtt og fisk. Så i grunnen tror jeg de passer til nesten hva som helst – tja, kanskje ikke sjokoladepudding, men du skjønner sikkert hva jeg mener.

Ingredienser

  • 750 gr regnbuegulrøtter
  • 50+50 gr smør
  • salt og pepper
  • frisk timian
  • sitronsaft
  • maldonsalt

Fremgangsmåte

  • Sett oven på 200 grader varmluft, eller 220 grader vanlig.
  • Vask gulrøttene grundig og del dem i to på langs, eller 4 dersom de er veldig tykke.
  • Legg gulrøttene på et stekebrett og dryss over salt og pepper og legg halvparten (50 gr) av smøret i klatter oppå gulrøttene sammen med noen kvister timian.
  • Bak i 15 minutter. Vend gulrøttene og legg på resten av smøret.
  • Bak i 10 minutter til.

Server med ekstra timian , en skvis sitron og flaksalt drysset over. Vel bekomme.
