I det siste året har jeg stadig oftere blitt dratt mot det indiske kjøkkenet. Kanskje er det de varmende krydrene og store smakene som virker trøstende og oppløftende i disse tider. Vel, unasett grunn så smaker det godt, og chicken korma er ikke noe unntak. Indisk mat kan være brennende sterk, men dette er en temmelig mild kyllinggryte.

Indiske oppskrifter har ofte en veldig lang ingrediensliste, men ikke gi opp av den grunn. Mye er tørre krydder som kan brukes til flere ting. Spisskummen, for eksempel brukes også i mexikansk mat, og er et av hovedkrydrene i tacokrydderblandingen. Det brukes også mye i Midtøsten til å sette smak på ulike kjøtt og grønnsaksretter.  Malt koriander er kanskje også et litt uvant krydder, men også det finner ofte veien til tacokrydderet. Så poenget mitt er egentlig bare at selv om du kanskje må skaffe deg noen flere krydre for å lage indisk mat, kan du bruke dem til flere forskjellige ting.

Hvis du tenker at indisk mat er fet og usunn, er du ganske på jordet. I hvert fall når det gjelder denne oppskriften på chicken korma. Her har jeg erstattet fløte med yoghurt og tilsatt ekstra grønnsaker i form at sopp og spinat. Det betyr imidlertid ikke at den gode smaken er borte eller at den tykke kremede sausen er borte.

Ingredienser

  • 1 løk
  • 2 ss revet ingefær
  • 2 fedd hvitløk
  • olje til steking
  • 1 ss tomatpuré
  • 1 ts spisskummen
  • 1 ts paprikapulver
  • 1/2 ts gurkemeie
  • 1 ts malt koriander
  • 1/2 ts chilipulver
  • 6 ss malte mandler (evt. mandelmel)
  • 600 gr kyllingfilet, i biter
  • 3 dl kyllingbuljong
  • 200 gr aromasopp
  • 100 gr spinat
  • 1 dl yoghurt naturell
  • salt

Fremgangsmåte

  • Finhakk løken og fres den i olje til den blir brun og sprø (hvis du har tålmodighet). Hvis ikke fres i hvert fall i 5 min.
  • Tilsett finhakket hvitløk og ingefær og fres videre i 1 minutt. Tilsett evt. litt mer olje om det virker tørt.
  • Ha oppi de tørre krydrene (spisskummen, paprikapulver, gurkemeie, koriander og chilipulver) og fres sammen med løken til det begynner å lukte godt - ca. 1 min.
  • Tilsett tomatpureen og fres i ca. 1. min.
  • Ha oppi kyllingen og la den steke til den har fått litt farge på alle sider.
  • Tilsett de malte mandlene, soppen og kyllingbuljongen og la det småkoke til kyllingen er gjennomstekt.
  • Rør inn yoghurt og spinat og la det bli gjennomvarmt.
