Inspirasjon kan komme fra mange plasser, og denne gangen kom den fra et realityprogram på TV. Jeg har lenge hatt lyst til å lage vårruller, men har sett for meg at det er et litt stort prosjekt å dra  i land på en helt vanlig hverdag etter jobb og før alle skal hvert til sitt igjen. Men så sto plutselig selveste Eyvind Hellstrøm på TV’en min og lærte en veldig sliten husmor å lage vårruller. De så veldig gode ut, barna som egentlig ikke likte noen ting spiste med stor appetitt, og det så ikke vanskelig ut i det hele tatt. Det var det som skulle til. Jeg var blitt inspirert – crispy vårruller med kjøtt har blitt en schlager hjemme hos oss.

Ved første anledning sto det altså vårruller på menyen hjemme hos oss også. Og for en test. Den dagen hadde vi 7 sultne jenter som skulle ha mat før de dro på trening. Her kunne jeg ikke fomle og somle, maten måtte på bordet fort. Grønnsaker ble kuttet, karbonadedeig stekt og små pakker laget i et forrykende tempo. Oppskriften min er ikke veldig lik den Hellstrøm viste, men inspirasjonen kom helt klart der i fra. Han lagde en vegetarvariant, mens mine hadde kjøtt i seg. Dessuten, kanskje den største forskjellen; han stekte sine i rikelig med olje i en stekepanne, mens jeg bare penslet mine med olje og bakte dem i ovnen. Jeg fant nemlig ut at jeg ikke hadde tid til å steke alle i pannen, for det måtte jo nødvendigvis bli flere omganger. I ovnen kunne jeg derimot steke alle på en gang. En annen fordel er da at vårrullene blir langt magrere.

Når vårrullene kom på bordet, forsvant de nesten som dugg for solen. Dette var definitivt en populær middagsrett. En annen fordel, er at de inneholder mye grønnsaker. Jeg tror ikke barna hadde den fjerneste anelse om hvor mye grønnsaker de egentlig spiste (he he). Jeg brukte kål, gulrot, fenikke, sopp og vårløk, men her kan man i grunn bruke hva man har. Det er bare å pøse på og blande det man har. Andre grønnsaker som helt sikkert ville fungere bra er bønnespirer, sukkererter, selleri, squash, paprika.

Ingredienser

  • 500 gr karbonadedeig
  • 300 gr kål
  • 2 gulrøtter
  • 1 liten fenikkel
  • 50 gr spinatblader
  • 1 portobellosopp
  • 4 vårløk
  • 2 fedd hvitløk
  • pepper
  • 3 ss kejap manis
  • 3 ss soyasaus
  • --
  • 1 pakke vårrullark (20 stk)
  • --
  • Søt chilisaus fra butikken

Fremgangsmåte

Oppskriften gir ca. 20 vårruller.

  • Sett ovnen på 200 grader.
  • Skjær alle grønnsakene i så tynne strimler som mulig, bruk gjerne mandolin dersom du har.
  • Stek karbonadedeigen til den blir grynete og gjennomstekt.
  • Ha oppi grønnsakene og la det surre til grønnsakene har blitt myke og faller sammen.
  • Kværn over pepper og ha i kejap manis og soyasaus.
  • Bland godt og dersom det er litt fuktighet, la det koke til blandingen er nokså tørr.
  • Legg et vårrullark på bordet med en spiss mot deg (som en diamant).
  • Legg et par spiseskjeer med fyll nesten nederst i spissen. Rull en gang og brett hjørnene til høyre og venstre over (omtrent som en konvolutt) og fortsett å rulle til det er en stram rull.
  • Legg vårrullen på et stekebrett med skjøten ned og fortsett til det ikke er flere ark eller fyll igjen.
  • Stek i ovnen i ca. 10 minutter. Sett grillen på de siste par minuttene dersom de ser litt bleke ut.

Server med chilisaus til å dyppe i.
