Vårruller er populær mat hjemme hos oss. Og det er jo ingen grunn til at de ikke kan komme i en vegetarvariant også. Vegetariske vårruller er faktisk så gode at du ikke vil tenke over at det «mangler» kjøtt i dem.

Fast-food er det ikke, for alt må skjæres i tynne strimler og så skal alle rullene rulles  for hånd. Men det ferdige resultatet er deilige, sprø ruller. Og da har det blitt fast-food, for da forsvinner det lynraskt fra bordet.  

I disse rullene kan man nesten bruke hva det skal være. Sjekk hva du har i grønnsakskuffen og kutt det opp. Jeg har brukt vanlig kål, gulrøtter, paprika, vårløk, sopp og bønnespirer. Men nesten all slags rotfrukt er fint å bruke bare det blir kuttet i tynne strimler. Sopp gir en fin umami smak, og det samme gjør sellerirot.

Det er vanlig å frittere vårrullene eller i hvert fall steke dem i godt med olje. Jeg pleier imidlertid å steke dem i ovnen i stedet. Jeg synes de smaker kjempegodt allikevel, og da sparer jeg meg for det fettet, stekeosen i kjøkkenet og problemet med å kvitte meg med oljen etterpå. Ingredienser

  • 100 gr glassnudler
  • 1/4 kålhode
  • 1 stor gulrot
  • 1 rød paprika
  • 1 bunt vårløk
  • 2 portobellosopp
  • bønneskudd
  • 1 ss finhakket ingefær
  • 2 fedd hvitløk finhakket
  • olje til steking
  • 2 ss kejap manis
  • 2 ss soyasaus
  • 20 vårrullark

Fremgangsmåte

  • Kok glassnudlene etter anvisning på pakken og sett til side.
  • Finsnitt alle grønnsakene. Bruk gjerne mandolin om du har det.
  • Fres først hvitløken og ingefæren i oljen.
  • Ha deretter i resten av grønnsakene og stek til det har falt sammen og blitt mykt.
  • Klipp glassnudler i kortere biter og tilsett disse sammen med  kejap manis og soyasaus.
  • Bland alt godt i stekepannen.
  • Ta ett og ett vårrullark og legg det på bordet foran deg med et hjørne pekende mot deg (som en diamant). Legg et par spiseskjeer på nedre halvdel. Brett den nederste spissen over fyllet og spissene på siden inn mot midten og rull helt sammen. Rull så stramt du kan.
  • Legg de ferdig vårrullene på et stekebrett med bakepapir på.
  • Stek vårrullene i ovnen på 220 grader (gjerne varmluft) i 12-15 minutter. Er de litt bleke, kan du sette på grillen de siste par-tre minuttene.

Server med søt chillisaus og en grønn salat ved siden av. Velbekomme

Hei Markus, tiden det tar å lage denne oppskriften avhenger veldig av hvor kjapp du er med kniven. Men det ar nok fort en time eller litt mer. Har du mandolin eller velger å bruke kjøkkenmaskin, vil det gå raskere å kutte grønnsakene. Rullingen av vårrullene går raskt når man først får dreisen på det. Håper du har lyst til å prøve, selv om det kanskje tar litt tid.

Hei, jeg skal lage dette til en skoleoppgave som teller mye på karakteren min. Hvis jeg øver mye hjemme tror du disse vårullene vil vise høy kompentanse ?

Oj, jeg vet jo ikke hva din lærer legger vekt på, så det er vanskelig å svare på. Men de krever mye kutting og bretting av vårrullene, så kanskje. Uansett hva du velger å lage, så ønsker jeg deg lykke til med skoleoppgaven din.
