Sist det var mammutsalg rasket jeg med meg en haug med kokebøker. Det pleier jeg alltid å gjøre, for dersom jeg skulle kjøpe alle kokebøkene mine til full pris, ville det etter hvert bli en helt formue. Nok om det, sist fikk jeg med meg en som heter «Bills asiatiske smaker». Den er skrevet av en australsk kokk. Oppskriftene er dermed sikkert «vestifisert» en smule, men den asiatiske touchen er umiskjennelig der allikevel. Boken er stappfull av enkle oppskrifter og vakre bilder.

Det er ikke så ofte vi har japansk mat hjemme hos oss, i hvert fall dersom vi ser bort fra litt sushi og sashimi i ny og ne. Set er ikke fordi jeg ikke liker japansk mat, men fordi jeg har en relativt begrenset erfaring med den. I dag hadde jeg bestemt meg for en japanskinspirert lakserett. I denne retten er mirin en viktig ingrediens. Mirin er en slags risvin som kan minne litt om sake, men har en mye lavere alkoholprosent og en langt søtligere smak. Den får kjøpt i velassorterte asiatiske forretninger.

Ingredienser

  • 600 gr laksefilet
  • 4 ss mirin
  • 4 ss soyasaus
  • 2 ss mykt brunt sukker
  • 1 ss sitronsaus
  • --
  • 1 slangeagurk
  • 2 ss mirin
  • 2 ss eplesidereddik
  • 1 ts sesamolje
  • --
  • 1 brokkolihode
  • 1 ss sesamfrø
  • 1 ss olje til steking
  • 2 ss soyasaus

Fremgangsmåte

  • Begynn med å lage marinaden til fisken. Bland mirin, soya, sukker og sitron godt og ha det i en pose.
  • Legg fisken oppi og sett lukk igjen. La fisken ligge i kjøleskapet i marinaden i ca. 10 minutter. Snu posen et par ganger.
  • Sett på grillfunksjonen i ovnen.
  • Del agurken i to på langs og skrap ut den myke kjernen. Skjær agurken i halvmåner som er ca. 1/2 cm tykke.
  • Bland mirin, eplesidereddik og sesamfrøolje og hell over agurken. Sett til side til servering.
  • Ta laksen ut av posen og grill den i ca. 10 minutter til den har fått fin farge på toppen, men fortsatt er litt rosa i midten.
  • Mens laksen koser seg under grillen, helles marinaden i en liten gryte og kokes inn til den blir tyktflytende.
  • Når laksen er ferdig helles marinaden over.
  • Rens brokkolien og skjær den i pene buketter.
  • Kok brokkolien nesten mør i litt vann. Du trenger ikke salt i vannet.
  • Rist sesamfrøene i en stekepanne til de begynner å poppe. Ta dem ut av pannen.
  • Hell vannet av brokkolien og hell over soyasausen og sesamfrøene.

Server laksen med brokkoli og agurksalat og gjerne ris ved siden av. Vel bekomme.
