Da jeg var en tur i butikken i går, var det et nokså rikt utvalg av lammekjøtt. Det var lammestek, fårikålkjøtt, bog, kvernet lammekjøtt og lammeskank. I en egen disk lå det noen stykker med flatbiff av lam. De var nedpriset fordi de ville gå ut på dato i løpet av helgen. Lucky me, tenkte jeg. Kjøttet er jo alltid best når det nærmer seg utløpsdato. Men hvorfor har ikke disse flatbiffene fått ben å gå på? tenkte jeg for meg selv. Kanskje ikke folk vet hva de skal gjøre med den? Den er jo ypperlig til gryteretter, og går fint å bruke som biff også dersom man tar tiden til hjelp.

Jeg hadde ikke lyst på lammegryte, så da fikk det bli lammebiff i stedet. Med sous vide teknikk og tiden blir selv de mindre møre stykkene supre. Sous vide går ut på å trekke kjøttet i vann som holder den samme temperaturen som man har tenkt at kjøttet skal ha som kjernetemperatur. På den måten unngår man at kjøttet blir kokt tørt, for det blir aldri varmere enn det man har bestemt seg for, uansett hvor lenge det ligger i vannbad.

Egentlig betyr sous vide «under vakuum» og det er vanlig å vakuumere kjøttet før man legger det ned i vannbadet. Dessuten er det vanligst å bruke en stor og dyr sous vide maskin og en dertil hørenede vakuumeringsmaskin.  Jeg har ingen av delene, men det går helt fint å bruke teknikken for det. Jeg bruker en jerngryte med lokk. Jerngryten holder veldig godt på varmen og sørger for en stabil varme. Jeg fyller så gryten med vann og varmer opp til ønsket temperatur. I dette tilfellet er det 58 grader. Det sjekker jeg med et steketermometer. Så setter jeg ovnen på 60 grader. I stedet for vakuumering, pakker jeg kjøttet stramt inn i flere lag med gladpac. Så putter jeg rett og slett kjøttet oppi vannet i gryten, legger på lokket og setter det inn i ovnen, leeeenge. Fordi temperaturen er så lav tar det lang tid og fordi flatbiff ikke er det møreste biffstykket på lammet, lar jeg det få ekstra tid for å bøte på det. Men tålmodigheten ble definitivt rikt belønnet i form at et særdeles smaksrikt og mørt kjøttstykke til slutt.

Den eneste ulempen jeg ser med denne metoden er at det ikke blir noen stekekraft som kan brukes som saus. Det har jeg her løst ved å lage en soppstuing. Men selvsagt går det fint an å lage saus på en annen måte. Prøv for eksempel en portvinssaus.

I dag brukte jeg Lofotlam, og hva er vel mer naturlig enn å bruke den nordnorske poteten Gulløye. Det er en nydelig potet med god smak. Det er kanskje ikke så vanlig å få tak i den her på Østlandet, men ser du den i butikken, bør du definitivt prøve den. Skikkelig snadder er det.

Ingredienser

  • 600 gr flatbiff av Lofotlam
  • 2 kvister rosmarin
  • 2 ts hel grønn pepper
  • 250 gr kantareller
  • 1 dl matfløte
  • 2 ss smør
  • 1 ts dijon sennep
  • 1 ts soyasaus
  • salt og pepper
  • 4 tomater
  • 4 ss revet parmesanost
  • 1 kvist rosmarin
  • 600 gr gulløyepoteter

Fremgangsmåte

  • Sett ovnen på 60 grader.
  • Finhakk rosmarinen og knus pepperen grovt.
  • Klapp kjøttet tørt og gni det inn med rosmarin og pepper.
  • Pakk kjøttet inn så stramt som mulig i flere omganger med gladpac. I hvert fall 3-4 lag.  Eller legg det i en ziplock-pose som senkes sakte ned i vann for å presse ut vannet før posen lukke igjen.
  • Varm opp vann i en stor jerngryte til det holder 58 grader.
  • Legg kjøttstykket oppi gryten, sett på lokk og sett hele greia inn i ovnen.
  • La den stå der i 3 timer. Når det nærmer seg servering gjøres tilbehøret i stand.
  • Kok potetene til de er møre.
  • Skjær tomatene i to og legg oppå noen rosmarinblader og revet parmesan. Drypp over noen dråper olivenolje. Stek det i stekeovn på 200 grader i ca. 15 minutter.
  • Rens soppen og stek den i smør til den er myk. Tilsett fløte, soyasaus og sennep og la det koke til fløten tykner.
  • Rett før servering tas kjøttet ut av ovnen og pakkes ut av plasten.
  • Klapp kjøttet tørt.
  • Varm en stekepanne så den blir skikkelig varm.
  • Ha oppi en klatt med smør og stek kjøttet et minutt på hver side slik at det får en fin stekeskorpe.
  • Skjær kjøttet i serveringskiver og anrett med soppstuing, tomater og poteter. Vel bekomme.
