Lam og fløtegratinert poteter er en klassisk kombinasjon, og jeg tipper det står mange slike rundt på norske bord i løpet av en høsthelg. Og det kommer ikke et vondt ord om denne kombinasjonen over mine lepper. Jeg synes det er kjempegodt. Men av og til er det jo morsomt med en liten vri, da. I går hadde Husbond kjøpt flatbiff av lam, og for variasjonens skyld ble potetene skiftet ut med jordskokker. Og bare for å si det med en gang. Gratinerte jordskokker med lam er også en super kombinasjon. Det fungerte veldig bra. Jordskokkene har en litt nøtteaktig smak som passet ypperlig til lammet.

Jeg fulgte samme prosedyre som jeg gjør når jeg lager med poteter. Lammet tilberedte vi sous vide. Slik som jeg har beskrevet i en blogpost om lammebiff. Flatbiffen var ca. 350 gram og vi lot den ligge i vannbadet i ca. fire timer. Kjøttet ble fantastisk mørt og smaksrikt.

Ingredienser

  • 350 gr. flatbiff av lam
  • pepper
  • 1 fedd hvitløk
  • 2 kvister rosmarin
  • Gladpack
  • --
  • 400 gr jordskokker
  • 1 liten løk
  • 2 fedd hvitløk
  • 1 dl fløte
  • 0,5 dl melk
  • salt og pepper
  • --
  • Aspargesbønner

Fremgangsmåte

  • Klapp kjøttet tørt og gni inn pepper.
  • Skjær hvitløken i tynne skiver og legg på kjøttet sammen med rosmarinblader.
  • Pakk kjøttet inn i flere lag med Gladpack, eller legg det i en ziplock-pose og klem luften ut. Varm vann i en støpejernsgryte opp til 57 grader, og sett ovnen på 60 grader.
  • Legg kjøttet i gryten og legg på lokket. Sett inn i ovnen og la det stå der i 4 timer.
  • Forvarm ovnen til 200 grader (varmluft.)
  • Har du to ovner kan du gjøre dette parallelt, hvis ikke tar du ut kjøttet og lar det ligge i vannet, mens du bruker ovnen til jordskokkene.
  • Skrell jordskokkene og skjær dem i 1/2 cm tykke skiver. Skjær løken i tynne ringer og finhakk hvitløken.
  • Ha alt i en tykkbunnet gryte og kok opp og la det koke i ca. 5 minutter. Pass på at det ikke brenner seg fast i bunnen.
  • Smør en liten ildfast form og hell alt over i formen. Sett formen inn i ovnen og gratiner i 15-20 minutter
  • Stikk en kniv nedi og å kjenne om jordskokkene er møre. På grunn av stivelsen i jordskokkene får gratengen en fin gyllen overflate selv uten ost.
  • Når steketiden nærmer seg slutten tas kjøttet opp av vannet og pakkes ut. Klapp det tørt og stek det ved høy varme i litt olje i en stekepanne. Kjøttet skal kun få stekeskorpe. Det er ferdig varmebehandlet så her er det kun snakk om et minutt eller to på hver side. Ikke mer. På denne måten får du lammekjøtt som er supermørt og rosa tvers igjennom.

Server med kokte aspargesbønner ved siden av. Ønsker du også en saus, kan du for eksempel lage en portvinssaus.  Vel bekomme.
