Jeg har ved et par anledninger lagt ut bloggposter om chili con carne. Her kommer en helt vegetarisk variant, faktisk er den vegansk dersom man dropper rømmen og osten på toppen til slutt. Men mangelen på kjøtt gjør ikke denne retten dårligere eller til et mindreverdig måltid. Min variant av chili sin carne er proppfull av gode smaker og farger. En masse bønner gjør at retten metter godt også.

En blanding av chili, spisskummen, allehånde, cayennepepper og oregano gir skikkelig meksikansk smak. Siden Lillemor ikke liker særlig sterk mat, er oppskriften nedenfor ikke veldig sterk. Liker du å svette på overleppen er det bare å justere opp mengden chili og cayennepepper. Jeg har brukt hermetiske bønner i denne gryten, og det er helt greit. Det er bare  viktig å huske å skylle bønnene veldig godt, for den laken de ligger i er ikke god i det hele tatt, og vil skjemme retten dersom den kommer med. Selvsagt kan du bruke tørre bønner også, men da må de legges i vann dagen i forveien og kokes knapt møre på forhånd. Dersom du bruker mye bønner, kan det være lurt å koke en stor porsjon og fryse ned i mindre porsjoner slik at det bare er å ta ut av fryseren neste gang du trenger bønner.

Ingredienser

  • 1 1/2 løk
  • 2 fedd hvitløk
  • 2 ss olje til steking
  • 1 chili
  • 1 ts spisskummen
  • 0,5 ts cayennepepper
  • 1/4 ts allehånde
  • 2 ts oregano
  • 1 ts kakao
  • 2 ss tomatpure
  • 1 boks hermetiske tomater
  • 1 dl vann
  • 1 søtpotet
  • 1 squash
  • 2 bokser bønner
  • 1 rød paprika
  • 1 grønn paprika
  • 1 gul paprika
  • Persille og/eller Koriander
  • Salt og pepper
  • --
  • Rømme
  • Revet gulost
  • Salat

Fremgangsmåte

  • Finhakke løken og hvitløken og fres det  i oljen til løken har blitt myk og nesten gjennomsiktig.
  • Ha i alle krydderene minus kakaoen og fres et par minutter til.
  • Tilsett tomatpure og rør godt ut.
  • Skjær squashen, søtpotet og paprikaen i grove biter og ha det oppi gryta og bland så grønnsakene blir dekket av krydder og tomatpure.
  • Tilsett tomatene, vann og bønnene.
  • La alt koke på middels varme i ca. 30 minutter. Grønnsakene skal være skikkelig møre.
  • Rett før servering røres grovhakket persille og/eller koriander inn.

Server med rømme, revet ost og salat ved siden av. Brød, ris eller tortillachips er også godt tilbehør. Vel bekomme.
