I store deler av landet er det nå vinterferie, og mange koser seg med lange skiturer eller dager i slalåmbakken. Og hva er ikke mer herlig enn å komme hjem til varm kakao og fersk hvetebakst. Ikke mye som jeg kan komme på. Her kommer en oppskrift på deilig kanel i svingene eller kanelsnurrer som andre kaller det. Denne oppskriften har Husbond fått for i sin ungdom av en klassevenninne hvis bestefar var baker. Den er skikkelig god. Oppskriften har mye mer gjær enn det som er vanlig nå for tiden, men det gjør jo at baksten blir stor og fin så vi bruker fortsatt denne oppskriften.

Sett deigen til kaldheving på morgenen, og bak ut når du kommer hjem. Eller bak når du kommer hjem, og kanskje er det noen igjen til å ha med i sekken neste dag. Selv om jeg ikke kan garantere det siste, for disse får ben å gå på.

Ingredienser

  • 1 kg hvetemel
  • 200 gr smør
  • 8 ss sukker
  • 100 gr gjær
  • 6 dl melk
  • --

  • 5 ts kanel

Fremgangsmåte

Denne oppskriften gir ca. 24 kanelsnurrer

  • Sett smøret på kjøkkenbenken et par timer før du begynner å lage deigen slik at det rekker å bli mykt - da er det lettere å røre det sammen med sukker og kanel.
  • Smelt smør til bollene og ha oppi melken.
  • Pass på at det er fingervarmt. Rør inn gjæren og ha blandingen i mel og sukker. Jeg pleier å holde av litt av melet til jeg ser hvilken konsistens deigen får. Noen gange er melet tørt og det skal mindre til og andre ganger trenger jeg alt melet. Elt godt.
  • Dekk deigen til med et kjøkkenhåndkle eller litt plastfilm og sett det til heving i ca. 30 minutter på et lunt sted.
  • Mens deigen hever ferdig røres mykt smør, sukker og kanel til fyllet godt sammen.
  • Del den ferdig hevede deigen i to og kjevle ut to rektangulære leiver.
  • Smør halvparten av kanelsmøret på hver av leivene, men la det være en liten stripe ytterst uten smørblanding.
  • Rull sammen og skjær hver rull i ca. 12 skiver.
  • Etterhev i ca. 30 minutter.
  • Pensle med et sammenpisket egg og stek i ca. 10 minutter på 225 grader.

Ta bollene over på en rist og la dem avkjøle seg litt før alle kan kaste seg over dem.
