I morgen er det Luciadagen. Det er nok mange barn som gleder seg til å gå i prosesjon med lys, synge Luciasangen og spise lussekatter. Dersom man ikke har et barnehagebarn, er Luciadagen for alle andre stort sett en anledning til å spise nybakt gjærbakst i form av gylne lussekatter.

Tradisjonelt får lussekattene sin fine gylne farge fra safran. Jeg er ikke så veldig glad i safransmaken. Jeg foretrekker mye heller at min gjærbakst smaker av kardemomme. Men det er jo ingen grunn til å gi opp fargen av den grunn. Litt gurkemeie i deigen og den blir minst like flott og gyllen som med safran.

Ingredienser

  • 500 gr hvetemel
  • 4 ss sukker
  • 1 ts gurkemeie
  • 1 ts kardemomme
  • 50 gr gjær
  • 3 dl melk
  • 100 gr smør

Fremgangsmåte

Denne deigen gir 16-20 lussekatter, alt avhenig av utforming

  • Ha alle de tørre ingredienser i en kjøkkenmaskin.
  • Smuldre oppi gjæren og bland sammen.
  • Tilsett melken og elt deigen i 10 minutter.
  • Tilsett smøret i små biter og elt i 5 min til.
  • Sett deigen et lunt sted og la den heve til dobbel størrelse, ca. 30 minutter.
  • Bak deigen ut til lussekatter og etterhev i ca. 30 minutter.
  • Stek lussekattene i ca. 7 minutter på 220 grader.

Avkjøl på rist og nyt sammen med glad barnesang.

Tips

Vil du heller bruke safran, kan du kutte ut kardemomme og gurkemeie og erstatte dette med ett gram safran.
