Etter konfirmasjonen hadde vil litt andebryst igjen. Dette sammen med frukt og grønnsaker i kjøleskapet ble til en deilig frisk asiatisk salat med and og mango. Inspirasjonen er hetet fra Thailand. Der bruker de mye friske urter og er opptatt av å balansere smakene søtt, syrlig, bittert, salt og hot.

Her møter det litt fete andekjøttet frisk mango og bringebær og salaten bidrar til litt bitterhet mens løk og fennikel gir litt tyggemotstand. Dressingen er både hot, syrlig, søt og sterk på en gang. Dette er rett og slett supre smaker som sammen gjør dette til en av sommerens favorittsalater. Det er jeg sikker på. Asiatisk salat med and og mango passer like godt som en selvstendig lunsj eller middagsrett som på et koldtbord.

Og skulle du være så uheldig å ikke ha litt ferdigstekt andebryst liggende, kan du jo steke ett bryst eller to til denne salaten. Eller du kan bruke kyllingbryst som selvsagt er litt mer budsjettvennlig.

Når jeg skal lage noe med rester liker jeg å lage noe helt nytt.  Jeg synes nemlig at det blir litt kjedelig å spise det samme flere dager i strekk. Da er det å forvandle kjøtt, eller fiskerester til en salat en av mine favorittmåter.

Ingredienser

  • rosastekt andebryst
  • 1 romanosalat
  • ruccolasalat
  • urter som mynte eller koriander
  • spirer eller microgreens
  • 1 mango
  • 1 fennikel
  • 1/2 rødløk
  • 1/2 agurk
  • bringebær
  • 1 lime, saften
  • 2 ss fiskesaus
  • 2 ss rapsolje
  • 2 ts sukker
  • 1 fedd hvitløk
  • 1 liten rød chili

Fremgangsmåte

  • Rens grønnsakene og skjær i passe store biter.
  • Skjær mangoen i mindre biter.
  • Skjær andekjøttet i mindre biter.
  • Pisk sammen limesaft, sukker, fiskesaus og olje og tilsett finhakket chili og hvitløk.
  • Bland alle salatingrediensene i en bolle og hell over dressingen rett før servering.

Kan godt serveres med en bolle ris ved siden av for et mer mettende måltid. Vel bekomme.

Tips

Dette var i utgangspunktet en restemiddag. Det ligger derfor i sakens natur at man kan bruke det man har. Har du ikke andekjøtt, kan du bruke kylling, okse eller svin. Og når det gjelder grønnsakene er det bare å kjøre på med det du har og liker. Jeg synes imidlertid at kontrasten salt, fett kjøtt og søt frukt fungerer veldig bra, så om du ikke har mango vil jeg anbefale å bruke en annen frukt eller søte bær.
