Nå får det være nok! Ute laver fortsatt snøen ned, jeg sjekker derfor inn på Railay Beach i Thailand. I hvert fall for en liten stund, i hodet mitt. Den beste måten å reise uten å forlate stedet man er på, er å spise seg dit man ønsker. Sånn er det i hvert fall for meg. Derfor lager jeg thailandsk biffsalat i dag. Denne salaten er proppfull av deilige, sprø grønnsaker og saftig biff. En pikant dressing setter prikken over i’en. At biffsalaten er enkel å lage i tillegg er jo ikke akkurat noe minus.

Dersom du har en hel biff, kan du selvsagt grille, eller steke den. Det er det beste, men det går fint å gjøre som jeg gjorde i dag, å bruke roastbiff. Har du dårlig tid, er nettopp det en fin måte å få et raskt og velsmakende måltid på bordet. Har du rester etter søndagssteken, går det også fint an å bruke.

Dressingen

Basis for dressingen til salaten er fiskesaus. Min erfaring er at noen fiskesauser er veldig mye sterkere enn andre. Det er derfor veldig viktig å smake seg frem når dressingen skal lages. I det thailandske kjøkkenet er man veldig opptatt av balanse. Men balanse i matveien er jo ganske subjektivt, så det jeg synes er passe behøver ikke være passe surt, salt, søtt for deg. Juster derfor smaken helt til du har en blanding du liker godt.

Ingredienser

  • 1 romanosalat
  • urter som mynte, koriander og thaibasilikum
  • 1/2 fenikkel
  • 1 liten rødløk
  • 10 cherrytomater
  • 1/2 agurk
  • 300 gr roastbiff
  • --
  • 2 lime, saften
  • 2 ss fiskesaus
  • 2 ts brunt sukker
  • 1 rød chili
  • 1 fedd hvitløk

Fremgangsmåte

  • Bland limesaft, fiskesaus, sukker og rør godt. Smak til. dressingen skal ha en balanse mellom søtt, syrlig og umami.
  • Finhakk hvitløken og skjær chilien i skiver og ha oppi dressingen. Sett dressingen til side.
  • Vask og skjær salaten i strimler.
  • Skjær fenikkel, agurk og rødløk i tynne skiver.
  • Del tomatene i 2.
  • Bland alle grønnsakene i en bolle og rett før servering bland inn dressingen.
  • Anrett på fat med roastbiffen på toppen.

Server straks, vel bekomme.

Tips

I stedet for romanosalat, går det fint å bruke hjertesalat.
