Her om dagen la jeg ut et spørsmål på instagram. Skal det være mel i fårikål? Ja, eller nei? Det viste seg at de fleste mener at hvetemel slett ikke har noe i fårikålen å gjøre. Jeg har gjort begge deler, og synes i grunnen at det er greit med litt hvetemel for å tykne sausen noe. Ikke mye riktignok, men litt. Dette er imidlertid ikke en ting som vipper meg av pinnen om det er på den ene eller andre måten. Det er imidlertid ikke et viktig spørsmål for meg.

For meg er det slik at hver årstid har sine retter som smaker spesielt godt akkurat da. Om høsten er det fårikål og andre retter med lam. Det er masse rotgrønnsaker og frukt fra trærne i hagen som frister mest. Det er lite som frister mer nå enn å pakke seg inn i litt tykkere klær, tenne stearinlys og inviterer familie og gode venner på en deilig, rykende varm gryte.

Min oppskrift på fårikål er nok temmelig tradisjonell. Det eneste er at jeg tilsetter 2-3 laurbærblad for å gi en liten ekstra smak. Og så var det hvetemelet da. Kutt det ut om du ikke synes det er en god idé.  Har du lyst på en litt annen vri, kan du prøve denne dobbeltpeprede varianten.

Ingredienser

  • 1,5 kg fårikålkjøtt
  • evt. 2 ss smør
  • 1 stort kålhode (ca. 1,5 kg)
  • 2 ss hele pepperkorn
  • 2 ts salt
  • 2 laurbærblad
  • 2 ss hvetemel (kan sløyfes)
  • 5 dl vann

Fremgangsmåte

  • Skyll kjøttet under kaldt vann.
  • Skjær kålen i båter.
  • Legg litt smør i bunnen av gryten dersom kjøttet er magert.
  • Legg kjøtt og kål lagvis i en stor gryte med kjøtt først.
  • Strø salt, pepperkorn og evt. hvetemel mellom lagene.
  • Hell vann på til slutt.
  • Kok opp og la det koke til kjøttet er helt mørt (1,5 - 2 timer).

Server med nykokte poteter og pynt evt. med litt kruspersille.
