I går lagde honning og misoglassert laks med pestocouscous.  Dette ble skikkelig godt og er så lettvint å lage. På mindre enn en halvtime var middagen ferdig. Honning og misoblandingen ga fisken en fin søt-umami smak og litt ekstra fin farge.

Jeg hørte på en podcast om honning, at det er mye bedre å bruke honning enn sukker til å glassere noe. Grunnen skal være den kjemiske sammensetningen av honning. Honning smelter og dermed karamelliserer helt jevnt i motsetning til sukker som har litt ujevn smelting. Og som du ser av bildet har overflaten på laksen blitt helt jevnt gyllen. Det er imidlertid viktig å huske at dersom det du skal steke tar lang tid, går karamelliseringen for langt og resultatet blir en brent overflate. Men med 10 minutter i ovnen går det helt fint.  Skal du glasere noe som skal steke i lang tid, kan du jo vente med honningen til de siste 10 minuttene.

Couscous har ikke all verden med smak, og etter min mening er den største fordelen med couscous at den er veldig rask å tilbedrede. Men med litt ekstra smak blir den helt OK. I dag brukte jeg noen skjeer med pesto som jeg blandet inn. Og så hadde jeg i litt erter og en pakke babyblader helt på slutten. Det fungerte supert og passet flott til fisken.

Ingredienser

  • 600 gr laksefilet uten skinn og ben
  • 1 ts miso
  • 2 ts flytende honning
  • 4 dl ukokt couscous
  • 2 ss pesto
  • 200 gr grønne erter
  • 1 pose microsalat

Fremgangsmåte

  • Sett ovnen på 180 grader.
  • Kok couscous etter anvisning på pakken.
  • Bland honning og miso og pensle laksefiletene med blandingen.
  • Bak laksen i ovnen i ovnen i 10 minutter. Sett gjerne på grillen de siste to minuttene for å få litt farge på overflaten.
  • Fløff opp couscousen med to gafler.
  • Kok ertene og bland dem med couscous, pesto og salat.
