Når klokken nærmere seg halv tolv begynner magen å rumle i magen og hjernen går på høygir. Spørsmålet som beskjeftiger meg da er nemlig hva kan jeg spise. Jada, to brødskiver, en med ost og en med pølse metter og er helt OK, men i disse hjemmekontortider er det jo fristende å gjøre litt mer ut av lunsjen. Noen ganger har jeg helt klart for meg hva det skal bli, mens andre ganger er det litt mer på måfå. Sånn var det i dag. Jeg hadde litt laks igjen etter middagen i går som måtte brukes opp, så det ble utgangspunktet. Resultatet ble altså en nesleomelett med laks.

Har du tenkt over hvor restevennlig en omelett er? I utgangspunktet er en omelett jo bare egg, litt væske og salt. Og med det utgangspunktet kan man pimpe opp omeletten med nesten hva som helst. I dag ble det altså litt rester av laks, noen grønnsaker og litt ugress fra hagen. If you can’t beat them – eat them. Det har blitt mitt nye mantra og nesler egner seg faktisk mye bedre i maten enn i hekken.

Brennesle har en fin, mild smak straks den blir varmebehandlet. Varmen tar nemlig knekken på de stoffene som gjør at brenneslen brenner. Skulle du ikke få tak i brennesle, kan du bytte den ut med spinat. Men prøv med brennesle en gang. Det er skikkelig godt, og ganske morsomt å kunne gå ut i naturen og bare hente inn råvaren. Nesle er dessuten veldig sunt og selvfølgelig helt gratis. Så hvorfor ikke prøve en nesleomelett på hjemmekontoret i dag?

Ingredienser

  • 5 egg
  • 2 ss melk
  • 1/2 ts salt og nykvernet pepper
  • 1 l nesler
  • olje til steking
  • 2 kokte poteter
  • 1 liten løk
  • 1 vårløk
  • 120 gr laks

Fremgangsmåte

  • Rens neslene godt i rikelig med kaldt vann.
  • Forvell neslene i 3 minutter. Hell av vannet og ha neslene over i iskaldt vann for å stoppe kokeprosessen.
  • Ta neslene opp av isvannet og klem ut så mye vann du klarer.
  • Finhakk neslene.
  • Pisk eggene sammen med melken og ha oppi salt og pepper og bland inn de finhakkede neslene.
  • Skjær potetene i små terninger,  hakk løken fint og skjær vårløken i tynne ringer.
  • Fres grønnsakene i litt olje i stekepannen og stek til potetene har fått litt farge og løken har blitt myk.
  • Hell eggeblandingen over og legg tynne lakseskiver oppå.
  • Senk varmen til middels lav, legg på lokk og la omeletten steke til den har satt seg.
