Jeg har en innrømmelse å komme med. Jeg er ikke så overbegeistret for fårikål. Grunnen til at fårikål ikke er på min topp ti liste over favorittmat, er at kjøttet som tradisjonelt brukes er fullt av fett, sener, ben og annet som ikke er kjøtt. Derfor er det ganske langt mellom hver gang vi har det her i huset.  Men her om dagen satt vi i lunsjen og pratet på jobben. Da nevnte Brith at hun bruket å legge masse pepper i litt vann kvelden før, og deretter bruke bløtevannet i fårikålen dagen etter. Det skulle gi en ekstra peppersmak uten en hel masse hel pepper mellom kålen og kjøttet. Min interesse var blitt vakt. En ny vri på fårikålen måtte jo prøves ut.

Som sagt så gjort. Butikkene er fulle av lammekjøtt på denne tiden av året, så direkte vanskelig var det ikke å få tak i råvarene. Jeg gikk for lammelår i skiver, for å unngå det over nevnte traume med mye lam som ikke er kjøtt. Pepper ble lagt i bløt og så var det bare å vente på at det skulle bli tid for å lage fårikålen. Som med all tradisjonsmat er det mange meninger om hvordan fårikålen skal tilberedes. Noen mener bestemt at det skal brukes sauekjøtt, mens de fleste (tror jeg) helst bruker lammekjøtt. Noen vil strø på litt mel for å jevne sausen. Det er noen som ikke vil ha hel pepper i maten og derfor pakker pepperen inn i gas slik at de får smaken men ikke pepperkornene. Ingredienser

  • 1 pakke pepper (12 gr)
  • 1.5 dl vann
  • 1,5 kg lammelår eller annet lammekjøtt
  • 1 stort kålhode
  • 2 ts salt
  • 2,5 dl kokende vann

Fremgangsmåte

  • Start med å legge nesten all pepperen i vann kvelden i forveien.
  • Samme dag; Skyll kjøttet i kaldt vann og klapp det tørt. Del det i passe porsjonsstykker.
  • Skjær kålen i båter. Skjær av det meste av stilken, men la en tynn stripe være igjen slik at båtene holder seg sammen under koking.
  • Ha evt. en smørklump i bunnen av kjelen dersom du har magert kjøtt og ønsker litt mer fett.
  • Legg så kål og kjøtt lagvis og dryss litt salt og pepperkornene som har ligget i vann natten over mellom lagene. Sil vannet med pepperkornene over i gryta og hell på kokende vann. Legg på lokk.
  • Kok opp og sett ned varmen. La det småkoke i 1,5 -2 timer. Gjerne lengre dersom du liker det.
  • Det er viktig å ikke røre oppi gryta mens det koker, for da går kålen i oppløsning og alt blir en udelikat mølje.
  • Drei litt forsiktig på gryta så det ikke setter seg ved, av og til.
